Absolutely nothing. Hot water will even distribute the sugar molecules more evenly which will cause less crystals in your Lollies. That's why sugar syrup ( sugar desolved in hot water) is best used for frozen treats. When you use sugar in cooled water you find that when frozen the item has more ice crystals ( separation of water and sugar) as opposed to when done in hot water. Try it out and find out.
