I have a large electric grain mill and I'm wondering if it's absolutely necessary to go through the soaking process to remove the gel in the buckwheat? Have you tried this technique without the soaking process, etc.?
@batelskitchen2 жыл бұрын
Hi there. I have not tried it with using an actual flour. I assume that the water ratio will be different than my original recipe because the buckwheat will need to drink more water because it was not pre soaked. I do welcome you to try your way, however I would recommend trying with only half of the amount of the recipe. So you don't end up throwing food if it doesn't work. I do know that it took me time to prefect this recipe in terms of quantity and ratio. But I would love to know how it turns out for you. Also, you can soak the buckwheat for 10-20 minutes in hot boiling water, and it should do the trick.

@@CharGC123 I give you my ratio for buckwheat flower tortillas in case you want to try them. 50 grams flower per 125 ml water. Blend with a bit of salt. Rest from 15 minutes onwards . I put a few drops xtra virgen olive oil on the base of my hot flat pan when I cook them for 2 minutes each side aprox

I have never tried. So. I'm not sure. Also, buckwheat flour is usually from the roasted one. So it won't be the same.

Can we switch oats for another non-grain ingredient (almond or amaranth flour, etc.)
@batelskitchen Жыл бұрын
Yes. Or don't put any oats, just put little less water. Like less 1/4 cup. I just like the texture that the oats gives. I believe almond flour would be absolutely ok too. Keep me posted. Good luck!

Can I use buckwit flour?...thank you
@batelskitchen Жыл бұрын
you don't think it's gonna work. You really need exact water ratio, and usually the store bought buckwheat flours are not from the raw buckwheat. You can soak the raw buckwheat for 20 minutes in boiling water to cut the soaking time.

Since we are allergic to the oats, can ground brown rice or ground millet or even chia seeds be used to replace the oats?
@batelskitchen Жыл бұрын
Try 1/4 cup of almond flour, or some sort of starch like corn, or potatoe, or arrow root. Or , skip the oats and add more buckwheat. Red lentils should work too. Please let me know what was best for you at the end.

Hi. Thanks for watching this video. Yes. I understand what you mean. But I wanted to show that the tortilla itself is oil free. Because many people are looking for oil free tortilla. I personally eat oils, and olive oil. But many of my recipes are naturally oil free. I hope I was able to explain myself in thr most respectful way to deliver my message.

@@laureeotero2745 you can skip the oats. But reduce the water a bit. Like less 3 tbsp water. Or more.
