We start the day be addressing the hoppers feeding the sorting system, by placing a chest above them without interrupting the water flow. Noticing the fields are ready for harvest, we proceed to take care of that before continuing excavation of the dirt and stone above the border of the 'Crop' section.
In the mineshaft, WE FINALLY DISCOVER MORE IRON ORE!!! Ironically, it is found within yet another diamond deposit...ROFL!! Before finishing the day, we load the iron ore into the furnace to be smelted, and make several loaves of bread in preparation for the next

If I remember correctly, the ore generation table was changed when they went to the much deeper world Gen. I think you'll be much more likely to find iron when you get to Y=0 or so.
