What is the temperature of the water bath and what temperature do you want the ingredients at when they are done for those first few steps? Did I miss it? I wouldn’t dream of attempting this without that information, pretty please?

In the video description box where she added written instructions, it says that you want that initial egg mixture to reach 40 degrees Celsius. Doesn’t say the temperature of the water bath, but I assume you want it to get it to boiling and then turn the heat off. If you have the heat on, there is the potential that you may overcook and scramble the eggs.
