Hi Steve, I had time to think about what you actually recorded/filmed and I know it was about the foods that you missed from Singapore. You were also very honest about how your life is like now, the fact that you showed us the job(you needn't have to, but did) you had to take on, to make ends meet says heaps. Above all, you presented it with humility and pride. I have found a new level of respect and admiration of you. You did what the late Price Philip always say: "just get on with it". In the long game, I know you will succeed, fly to Singapore to indulge the foods; sitting at the pointy end of the aircraft. Take care.

You secure your aircraft, clear customs & immigration and jump into a NTUC taxi to get to your airline's hotel. You get there, check-in and go to your room. You very quickly open your suitcase, pull out your t shirt and shorts and change out of your uniform. You go down to the lobby and jump into another NTUC taxi and head straight to your favourite hawker centre, and wahla! you are in food heaven! Keep this thought in your mind, Steve.

Look out for Prima Taste Laksa! They're the authentic "instant" noodle laksas. "Instant" because it will take about 7 minutes to cook.

For Singapore Katong style laksa, the closest you can get in NZ is Koka Laksa instant noodles. Available in Lim Chhour Chinatown off Ti Rakau.

Mak Nyonya is always my go-to brand for cooking paste. Their chicken curry and fish curry paste are really good. They also have curry laksa paste. You just need to buy the noodle, coconut milk and other ingredients to go with it.

Hi Steve, I did catch on about the rojak sauce in a jar. Well, the most difficult part of the rojak dish is taken care off. You just need get the raw ingredients and its all done.......yum!

@@ReddotDiaries an Asian mortar and pestle would have been how the rojak seller in Singapore crushed his peanuts, doing it the traditional way; although I suspect an electric blender/food processer was used for commercial quantity requirements. This mortar and pestle is a must in any Asian kitchen(home or commercial) and should readily available in the EPACS supermarket that you went to. This would be a good investment for the long term(I inherited my mum's) as it has multiple uses - crushing peanuts, chilli, herbs and spices etc etc. Do consider getting one :-)

Try adding some bean sprout, prawns & tau pok (fried beancurd) to the laksa to make it taste better. DIY chicken rice chilli: blend 4-5 red chilli + 3-4 cloves garlic; add pinch of sugar & salt; add 1-2 green lime . 😁

Must be a relief for you to be able to find such grocery store that carry sg products. At least when u miss a taste of singapore, you still have place to go esp during covid when travel is still restrictive :) and that sg accent with the lah is still pretty much on u..haha

Bring a mass tin with you around and you can cook your mee pok dried version anywhere. Trust me is nice because we do that while in NS.

Good job on getting that instant MeePok! It’s pretty close to the real deal. If I’m not wrong it’s the only brand of instant MeePok in SG. But why didn’t you get the other Chili? The Top Gourmet brand that Peter recommended. I discovered it last year & it’s gooooood. I buy the Sambal Belacan variant & it really packs a punch! I’m planning to try the Garlic & Lime (Chicken Rice style) variant next. Many will recommend the Prima brand instant Laksa but I won’t. It’s supposed to have won a number of international awards but I don’t like the texture of the noodles (quite bad tbh) & the flavour is good but overrated. And it’s definitely overpriced, even in SG. That said, it’s probably one of the better instant Laksas that you can get. My preference is the Nissin cup noodles Laksa. The noodles used are not the thick white Beehoon but the flavour is pretty legit for something in a styrofoam cup off the shelf. Another instant noodle you can try is the Bak Kut Teh instant noodles by the brand A1. When you crave the black herbal type of Bak Kut Teh, it really hits the spot! When I cook it it smells like I’m actually cooking the actual dish & not some instant noodles, that’s how impressive it’s haha. A1 also does an abalone instant noodles that comes with 2 actual mini abalones. The flavour is herbal-y, like Korean Jingseng Chicken but obviously different. This one is more premium than the Bak Kut Teh instant noodles though. The Bak Kut Teh one comes in a pack of 4 (or 5?). The abalone one is sold as a single pack & costs SGD5, I think. For beverage, if you do drink Teh Tarikk & like yours super sweet, try Max Tea. It works just like your instant Kopi O sachets. Maybe the next time you visit this supermarket again you can try out some of these items :D

Left out one more instant noodles! Red Chef! It’s a Malaysian brand though but I’m sure you’ll be able to find it at this supermarket. Try the Prawn Noodles. Extremely close to the actual thing! I watch you point out Prawn Noodles from the menu at the “cafe” so I thought I’d recommend this too!

I think its partly because I really do like the style of cooking and they suit my taste buds very well and partly because of the memory and feelings that I associate with every dish. I went through lots of ups and downs in Singapore and everytime I eat a local dish it reminds me of the first time I had them.. I guess I'm just a very sentimental person la 😂😂
