Help! I let my plums sit in the sugar and they smelled like they were restarting to ferment. Is this normal? Have I ruined the batch? Should I leave them in the fridge in sugar next time? Thank you for your video and advice.

As long as you have a normal ambiant temperature it should be fine. If you are worried you certainly can leave them in the fridge instead. There is a yeasty smell but I always chalked that up to normal and the pectin doing its thing. Remember, you are about to boil it to death and that should kill everything

Nice video! I just moved to a property here in northern Italy that has alot of fruit trees. One of them is a big mirabelle plum tree ( i think),along with kiwi, persimmon, grapes, olives, and others. I have never made jam, but you made it look easy. What is the purpose of rhe warm jars, does it make the lid airtight?

It's keeps them from shattering when you add the boiled jam. It also sterilizes. You'll find European canners care à lot less about keeping things "sterile" than Americans. But I never got a bad jar. 😊
