About two weeks ago I made a peanut butter jar's worth of preserves and it turned out very nicely. I used mixed berries currently in my freezer: blackberries, strawberries and blueberries, adding in unsweetened store bought applesauce, chia seeds and a spoonful of low sugar powdered pectin. I didn't make a mental note about additional sweetening but will be using a couple of tablespoons of monkfruit sweetener for the next batch....I have lots of berries to still use up ! This fruit mixture is so good with yogurt, over ice cream, in smoothies. Very versatile and not sickly sweet either.

@@HowToCookSmarter I've realized that the support nowadays for artisinal goods is higher which is great! I myself lived in Germany so I go back and see the change! I like the idea to reduce the sugar which is nice! Although pectin occurs naturally in several fruits, esp citrus. When I make homemade jam I also get a lemon or two. I add the lemon juice in cause it adds a nice acid to balance things out. Then I also add the squeezed out lemon rind, peel, seeds n all in (you can put it in a filter bag) and cook it in there with the fruit. You can use that as your source of pectin. Then just remove it afterwards :)! Additionally if you make citrus marmalade no added pectin is needed !

Even if you goof and end up with a runny jam, well, that's now a syrup for crepes, pancakes, ice cream, smoothies, etc. Or, carefully cooking it down to a thicker consistency. This does require a time commitment, low heat in a heavy bottomed pan and regular stirring to prevent scorching. It's a somewhat tedious process requiring patience to cook off just the right amount of excess water. Sasha is correct--a wide pan more effectively evaporates liquids than a pot.

I really like jam with jalapenos. Do you think it would work to cook one diced jalapeno with the fruit?

Very likely hot peppers won't pair well with berries but peaches, mangoes or pineapples do---a common mix in fruit salsas.

Hello .. wonderful. Now, I make rhubarb jam by boiling and adding only jello , and this keeps for months in the fridge. So, I 'm wondering when you say this only keeps for a week ?

While you have a lot of really great recipes and alternatives on your channel, I do have an issue with treating maple syrup as if it is not sugar, because it is totally a form of sugar (so is honey). What I really like doing as an alternative to sugars is using sweet spices like cinnamon and fruits that are naturally higher in sugar like mango so I get fiber with it. Not saying you have to change the way you do stuff, sugar in small amounts isn't necessarily bad for most people, I just want folks to be more educated on the many different forms that sugar can take.

Natural sugars are fine especially honey which is loaded with vitamins!

Maple syrup, honey, fruit (whether mango or others) are all still using its natural sugar to sweeten products. Sugar is sugar so your point is moot.
