Thanks for asking this question. Of course you can replace it with powdered gelatin. Bloom the same amount of gelatin powder in warm water, make sure there is no lumps in it and just mix it with the mixture. Key points is do not use so much water that can cause runny mirror glaze. The water ratio should be 5 times the amount of gelatin used. I will make a full tutorial for mirror glaze. Maybe I should make another recipe with powdered gelatin. Thanks again.
