Tofu-based and noodle-based dishes are is everywhere so it isn’t hard to find vegetarian. Vegan is harder because a lot of Japanese food is made with fish stock. Vegan places do exist though

It's hard to find an apartment, or even a house with a decent amount of counter space in Tokyo. It seemed to me (having toured about 30 places a few years ago - new luxury high rises or places in high-expat areas that are old enough to have been remodeled by a westerner are the only places that I saw with any appreciable kitchen space. Newer construction often has things like sink covers that increase the counter space.

I live in Taiwan and maybe it's different in Japan but here it's generally more expensive to cook yourself, unless you cook in bulk for a family. Also people seem to have forgot how to cook, lost in generations
