Why does people like misono ? they look a bit overpriced

The UX10 line is their most expensive one and they can be a little pricy, but Misono is one of the bigger more well known names in mass produced Japanese knives and they make a good, consistent knife that cuts well, is thin and is easy to maintain. Their entry level line of knives, the Misono Molybdenum is relatively inexpensive and their Misono 440 line is in between the Molybdenum and UX10 price wise, but I think all are very practical knives and are pretty popular for use in restaurants. They also make a carbon steel line of knives which are very nice if you don’t want stainless.

@@runoto the UX 10 is basically 19c27 steel if I've seen it correctly, right ?

@@dimmacommunication Yes, I’ve also read that’s the type of “Swedish” steel they use. I’ve sharpened and thinned a couple of UX10s for people and it’s a nice knife, the steel is relatively easy to sharpen and is very easy to use with a honing rod which is one of the reasons I think it’s pretty popular with professionals. The popularity also drove the price up I think. I talked to some people who bought theirs way back and it was a good bit cheaper.

@@runoto Yeah would be cool for 100$ or that ballpark, damn now costs an arm and a leg , that steel isn't that expensive to make
