Anatomically correct anime are called manhwa (the author sometimes trace 3D model)

The thing is, this tip actually works for a different kind of stylized humanoid characters: Anthropomorphic animals. If you want to anthropomorphize an animal's head, do not change the head shape, change the eyes. Otherwise, things look incredibly cursed.

The general idea is cat = cute, so you first draw a anatomically correct human and them try making it look as similar as cat as possible but still being a human

I think this misconception comes from the fact that anime and many cartoon faces are based off the proportions of babies/infants (eye to face ratio) and this is the same endearing trait we find « cute » in animals (its actually a trait that is bred into companion pets, cuteness, that is.).

That has more to do with Chibi and superdeformed styles. Anime as a medium came as an offshoot mix of Disney golden age animation and japanese aesthetics. You can see Disney also following a lot of similar individual carasteristic as anime but deviating in their way to get the modern disney style (Which in my opinion is in need of some shake up). Anime and manga being made by more than one entity then had a better opportunity to grab this base of style and make it into the rich medium that anime today currently is. Tho ingeneral the cat thing is just a coincidence because modern moe has a lot of really simplified elements that can make a face resemble a lot of things.

Fun fact, the "racist triangle", as ot has been dubbed, is a tecnique used to aid in the placement of the lips in relation to the chin and nose and has been dubbed the name for being viewed as discriminatory towards ethnicities whose characteristics feature larger lips. This tecnique, however, has also been pointed out for its similarity, and possible inspiration from the side view of a cat's head. In short, cats invented the racist triangle.

What I heard, people don’t use cat’s side profiles. They just use a front facing or 3/4ths picture and trace where the eyes and nose are aligned, then they add the chin and the rest of the face separately.
