I think the white stuff is dried up, old yeasts. Since coffee powder is hygroscopic, it's an excellent substrate for common yeasts to grow on. Left alone, when they finally consumed all of the coffee powder they die and dry up, leaving that white patina (which is quite common on old kitchen tools, and also usually not dangerous for human health). Great job on the restoration, and the video editing as well.

I was wondering why you didn't try to see if it unscrewed before trying the bearing puller LOL Love seeing Japanning going back one items that started out with it. Klasse Restaurierung, vielen Dank fürs ausführliche Zeigen. Wenn man es so richtig bequem haben möchte beim Mahlen: einfach ein dickes Schneidbrett gebraucht kaufen (Flohmarkt etc.), dann mit einer Oberfräse (oder dem Stecheisen) Material in Größe der Standfläche plus 1-2mm entfernen, das Ganze 0,5 cm tief , dann ist das Drehen der Kurbel selbst mit einer Hand ein Kinderspiel, und es ruckelt nicht!
