Does the mitred cut on the shower curb not create a sharp edge that might cut a foot? Does the grout remove this possibility?

you use a rubbing stone to make sure you dull the edge. Its a white refurbishing stone you use even when you score cut tile with a score cutter.

Depends on what size notch trowel you are using

If it is 1/2" and a 50lb bag of mortar. It would most likely cover around 40 sq.ft. But just look at the coverage on the bag of mortar for the size notch you are using and it will tell you how much it will cover per bag.

I mean when you cut the tile how much further do you make the miter cut to account for the thinset thickness? 1/8"?

just cut the tile on a 45 then match them up afterwards

Crap job ,you’ve created a weak edge. One knock and you’ll have a razor sharpe edge to deal with.
