In the video, you push the insulation all the way to the edges. In a real ceiling, those would be over the eaves in many cases, so shouldn't you only be insulating as far as the exterior wall?

Also what is left out of the video is the required 25mm gap between the roof underlay and the insulation. NZS4246 : 6.2.10 covers the details. So yes if you stopped at the wall it would help you get the required clearance.

Yeah in my ceiling they left gaps over the eaves vents so they can vent out hot air

You must wear kneepads. You don't want to harm your knees. Painful as hell and lasts for weeks. Damage could be permanent too
