As an alternative , I would use a small scoop or similar large spoon to make them all the same size at once, then freeze them for 30 min or so until they firm up. Then do the coating and frying with less chance of them coming apart or breaking during the preparation for the cooking oil. Also , I have no fondness for parsley, as a replacement I would use spinace or some other green vetetable to increase the health benefits from this meal portion.
