Hey Jeni, I love your videos! I just remodeled my kitchen and I have that same cook top in my island. Love it for canning!! I'm also a metal head. We don't all have to love country music to love canning and preserving. To each their own.

Hi. Love your videos. For the chicken piccata meal starter do you have a video showing how you prepare it for dinner after it had been canned? Assuming I just make a roux to thicken it up?

Anxious to see these I am been one of those times of life I am cooking for lots of people and try to keep everything on hand but sometimes you don't have celery sometimes you don't have onion sometimes you don't have the seasoning you want and I am starting to do more canning I've just been a basic ingredient canner but I've really got to run through my list in my head what do I use with this all the time and possibly put it in the jar with it so in the middle of the winter when everybody's working crazy hours and I'm only out of onions or something like that that it's already there the other things I need to look at are like thrive and dehydrated but would be so easy to just already have it in the jar and ready to go anxious to see the taste test on these and what you use them for and please make any other recommendations that even look like possibilities.

I believe it changed early 2021. You can see it on the USDA home good preservation website. They added the extra 1/4 inch for meat expansion. 😊

I could not find canning lids any place. My niece mailed me a package of Pur lids. Never heard of this brand. I was very pleasantly surprise. I used them to pressure can meat. Now I have to find them.

Nope. Sometimes the peels fall off when I pull the clove off. But that’s only when the garlic isn’t fresh. 😊

I canned chkn legs and thighs. I don’t have a lot of ideas on how to use it though. I used pints also. I cut the leg bone tips off so the legs would fit. I didn’t add water because they make their own juices and works well without water. I added a 1/2 t. Of knorr chkn boullion . Worked great. I’m going to do your way next. Sounds great. I made Asian chkn with breasts. I did taco flavoring for some enchiladas. Some Italian for my chkn baked spegetti . I also did Bourbon Chkn . ll turned out good

You can always put BBQ, hoisin, or Alfredo sauce on the chicken when you are heating it up

Is the new 1 1/4 rule for raw pack or par cooked to??? I love chicken piccata but never make it cause I’m the only one- but I could do this just for me!🙌🏻 Anytime I make/can a meal - I make some pints to send home with my daughter at college- I think she will love all of these!

It is for all meat raw or cooked. It’s just for meat expansion during the canning process. 😊

@@Jeni_Gough I figured that was the case but was curious in the event you have found a way to pre-mark your jars. I always think I'll remember where I placed them in the canner, and then, never do or forget when taking them out and they get all mixed up!

I'm a brand new subscriber and will be binge watching your videos in the days ahead as I learn how to can. I had one question. You made a point to mention that the seasoning that you were using did not have cornstarch. Is cornstarch an ingredient to watch out for when you are canning? (total newbie here!)

It’s not recommended for thickening when canning because it breaks down. Some people won’t use seasoning that contains cornstarch. I do use powdered bouillon that has it, but it is such a small amount, it doesn’t make a difference. Same with the seasoning. That was an FYI for those who won’t use seasoning with it. Only when water bath canning, I pour hot water over the lids before using them.

No. I can tell by looking at them. You can use sharpie on your lids if you need too though, it will stay on during the canning process. 😊

Oh you just set off the bells in my head…my Mom was known for her lemon chicken, she put lemon, rosemary, and garlic. It was so good! She didn’t can it but she baked it and to this day I sometimes think of those flavors. I’m going to experiment with my next ugly chicken batch! I have more beef to can tomorrow that I couldn’t finish today, but I’ll do it soon while it’s still on my mind! Thank you for your continuing inspiration! ♥️👍🙏🇺🇸🤓

Yum! I made your fish tacos last night and they were delicious...just need to work on keeping my oil at the right temperature 🤣. I thinned out my Greek yogurt with 1/2 and 1/2 and it worked great for the lime crema. Did you open the cowboy candy yet? 🤠 🌶

I had a couple of fails with the old lids but I have had more failures with Ball and Kerr. They have recently made an improvement with their lids and they are even better. 😊 Lid failures happen at times even though we do everything right.
