Prepper Potpourri

Can orange chicken and make a quick stir fry dinner.
Makes 3 pint jars.
Ingredients:
• 2 lb. chicken, cut in inch pieces
• 1 Tablespoon fresh ginger or ¾ teaspoon ground ginger
• 1 teaspoon garlic
• ½ teaspoon crushed red pepper
• 1 Tablespoon rice wine
• ½ teaspoon sesame oil
• ¼ teaspoon white pepper
• 1 ½ Tablespoon soy sauce
• 1 ½ Tablespoon water
• 5 Tablespoons granulated sugar
• 5 Tablespoons white vinegar
• 1 cup orange juice
• Zest of one orange

I made it, I canned it, and I served it for dinner tonight!! It was delicious! I served it with brown rice. I’m thawing more chicken thighs now to can a bigger batch. Thanks so very much!! I’m a new pressure canner, and it’s wonderful to have this success under my belt.

Oh, dang it. I wish I had seen this before I put plain chicken in the canner this morning. I will certainly save the recipe, because I want some meal starters like this! This is a great shelf stable pantry meal! Thank you! 😁❤️

If you place your chicken in the oven 375 for 15” it’s way quicker and works great. I do the same for beef for 1/2 hour at same temperature

New to pressure canning meat. Canned this about a month ago, and served it tonight with your suggestion of thickening the liquid and serving over rice and frozen veggies, it was delicious, thank you.

Made it and it was great. I can see why some want to can just the sauce... my next project... I'll play with it by tasting a small batch that's been thickened to see what it needs. I'm multiplying by 20. Doubling went well so I'll x20 this time and reduce some things and add back if needed. That sauce is really good. Reminded me of duck sauce but much better... I don't like duck sauce ... lol. If anyone interested, let me know and I'll list quantities.

Why do the pints need to process for 90 minutes rather than 75 which is normal for low acid, meats?

LOL, they don't. I was also canning quarts that day and misspoke. Sometimes my mouth just doesn't cooperate when I make a video. :)

If you are doing two or three different types of chicken like you did here. What do you do with the first and second batches while waiting for the third? Are you just jarring them up for a little while and setting them in the canner?

Thanks so much for sharing this..this is exciting instead of just canning beef, chicken pork etc by themselves, I watched this last night and went to store today to get an orange and some orange juice..can't wait to taste it. would you use clear gel on this..i watched someone make sweet n sour sauce using clear gel then pressure canned it. Thanks again

I’ve been looking for an orange chicken sauce to do in jelly jars to use on meat of choice. Could this be adapted to that by canning without the chicken in it? How long would it need to be in the water bath canner, 10 min like marmalade? Or would it need to be pressure canned?

Looks delicious- could you put clear gel in to thicken? I thought points were only processed for 75 mins not 90???

I don't like to use clearjel when canning. Instead, I add cornstarch after opening a jar if I want a thicker sauce. Yes, it should have said 75 for pints and 90 for quarts.

Either is fine. My son says it is "too orangey" so you may want to reduce the orange zest. Thanks for stopping by!

I am making this dish later today, and was wondering if it’s ok to add sweet pepper slices to this recipe before canning. I have a lot of dehydrated peppers and would like to use some. I would rehydrate them first. I’m brand new to pressure canning, (I canned pinto beans for my initiation yesterday), and want to follow all USDA guidelines. Would appreciate your guidance!!

I have a question, I made a rack of ribs in my instapot and used 4 cups of orange juice and 1 cup of apple sauce and 1/2 cup of BBQ sauce. After cooking the ribs, the broth that was left was so delicious I hate to throw it out. My question is can I can it for maybe orange chicken or maybe ham glaze? If so any tips or times would be greatly appreciated. Thank you.

i have a 941 canner. want to multiply times 20 or so. have you ever multiplied ingredients and does it turn out okay? lol. I know some ingredients can be too powerful when you increase recipe

I haven't. There is usually just my husband and I for dinner so pint jars work best. You would just need to process the quart jars for 90 minutes instead of the 75 minutes required for pints.

Hi.. I know. this may seem obvious. But. can you process, different foods at once, as long as processing time and quantity or jar sizes are the same?

Yes, if you have different foods in different jars, but the processing time is the same, there should be no problem doing so.

No. It is not advised to include rice in home canning. The experts say that a higher temp than our pressure canners is needed to safely can it.

Asian stores have it. you can use cooking shery and add a little sugar to replace rice wine.

If you didn't brown you could reduce the liquid by at least half

Have you told said family member what a pain he or she is because of their being a vegetarian? I’d tell them to cook for themselves. In no way would I change my cooking because of their ridiculous lifestyle choices.
