Making bacon in the oven on a baking sheet lined with parchment is the least messy way to make it. I brush mine with maple syrup before I cook it and it "candies" the bacon. It is so damn good.

Up until about 10 yrs ago , several of our family members would gather on a frigid January day and butcher 6-8 pigs. Not very much of those oinkers went to waste, we'd render the fat for lard (nothing better for baking) and save what was left as cracklins to chew on. Chops, blade steaks, roasts, lots of different varieties of sausage. And a considerable pile of bacon, both salted and smoked. The day also worked as a place to try out different recipes, including a cousin who tested out his latest variation of moonshine. Good times.

Eating high on the hog , a phrase used meant that you ate the loin and some other cuts first because they didn’t cure as well as other lower cuts belly,hams,etc ! Hogs were butchered in winter because lack of refrigeration also the fat was used to make lye soap !

My sourdough baker here bakes a bacon bread, which is pretty good! My grandfather used to soak up the bacon grease from the pan using white bread, which, along with coffee, was his breakfast. He lived to be 85, and the doctors couldn't understand why he had such low cholesterol. 🥓 🌞

I would have much preferred bacon in a dates purse! I'm a heavy truck mechanic, About 2 1/2 years ago I went on a blind date my best friend set up. Things went kinda good, although the whole time, I was catching whiffs of diesel fuel and was getting very self-conscious thinking I had fuel on me somewhere, and it was going to ruin things. After we finished eating, I quickly excused myself to the bathroom to try and get the smell off me even if I had to discard cloths!!! I smelled nothing and was confused more than ever. I found out later that she actually dabbed some diesel on because she thought I would like it for some reason. I told her I actually hated the smell because I was constantly around it. We both had one hell of a laugh.

Even though people love to eat bacon being the son of a pig farmer was never an easy task. All I have to do is ask my father about that, and he would tell me all the trouble that they had with the neighbors because of the ubiquitous pig however I grew up, loving bacon, lettuce, and tomato sandwiches, bacon and beans, bacon with breakfast any kindand even bacon rolled over beef and placed in a beef stew. When animal fat is treated in a chemical process, it is separated into glycerin (usevull in making explsives and a number of other thinks) and methyl stearate (which is similar to diesel fuel). This is how biodiesel can be made from animal fat. This is happening today, but may are still disposign of animal fat in land fills.

Used to raise pigs for a living; I miss not being able to just go to the freezer and grab a package of prime, farm raised bacon, sausage, ham, etc... Now, all of those are treats; gall stone's and high blood pressure says that bacon is a once a week indulgence only. Of the store bought brands, I personally prefer Wright's thick cut, in apple wood or hickory smoked flavors. If you're going to only get to have it once in awhile, at least make it decent bacon...

UK: During WW2 my grandfather kept a pig, and this continued into my toddlerhood in the early '50s. It was common to have, adjacent to the home dustbin, a swill bin for food waste to be fed to pigs.

About halfway through I had to stop the video and make a BLT. It made my mouth water for Bacon, and I had a traditional Bacon and Egg Breakfast. with grits, toast and a Satsuma. Hot tea instead of coffee.

I notice there was no mention of a traditional southern staple usually eaten on New Years Day. Hog Jowl. It is a smoked and cured thick cut from the, you guessed it, jowl area of the pig. It is one of THE most delicious things ever. It is usually served with black-eyed peas and collard greens with corn bread for the traditional meal. When my kids were little they called it Super Bacon!
