love that series, it is really a great one with a great cast, and the cast from the SG1 series had their own magic that was even better. However I feel Atlantis really started to become something amazing that was lost due to jealousy from one of the owners that lead to the wasn't universe disaster which is a shame. Trey didn't understand how good Atlantis was because they had to have it be over-serious drama instead of understanding it could be a enjoyed series while being lighthearted and still exploring great sci fi. It's sort of upsetting or frustrating to think how much they betrayed and ruin upsetting efforts to make that series something great. That wasn't just them and resetting something they made. that was hundreds of people working together, and several very talented writers, directors, lead actors and set designers/prop masters who all were working together to make it outstanding as the set crew were always in the background capturing it all just right. That being said I do regret someone has not started up their own version of Atlantis, though it would be a shame to lose all the world building and setting that everyone had worked to make a reality. You could take the cast and give them a new setting. Hey I would watch a star trek show or star wars show with that cast and writers if they were busy performing great stories. They could do wonders with the star wars setting. Though its a shame the Asgard story and ancient story is lost to time now, forever left to drift on the eons. They betrayed so many people for their pride and wounded ego.

Up until about 10 yrs ago , several of our family members would gather on a frigid January day and butcher 6-8 pigs. Not very much of those oinkers went to waste, we'd render the fat for lard (nothing better for baking) and save what was left as cracklins to chew on. Chops, blade steaks, roasts, lots of different varieties of sausage. And a considerable pile of bacon, both salted and smoked. The day also worked as a place to try out different recipes, including a cousin who tested out his latest variation of moonshine. Good times.

Eating high on the hog , a phrase used meant that you ate the loin and some other cuts first because they didn’t cure as well as other lower cuts belly,hams,etc ! Hogs were butchered in winter because lack of refrigeration also the fat was used to make lye soap !

That was my grandparents' generation in a nutshell. My grandma actually put the bacon IN the eggs. Then you soak it up with completely fiber-free bread and have gas for half the day...until you have your meatloaf/sausage/roast/chops for dinner and then that keeps you farting all night. During the depression, they didn't use the heater, just farted all night long to keep from dying from hypothermia.

Got into an argument with one of my doctors who tried to tell me not to supplement vitamin D because "it hasn't been approved by the FDA", to which I replied "they've had decades but are only concerned with approving meds that can make money - and 1/3 of all those FDA approvals get recalled within 5 years due to health risks". I remember back when all my doctors said Chiropractic was a fraud and whatever your personal beliefs about it, its now officially recognized for having benefits and included in modern health care. Hopefully Carnivore and Keto follow suit and will one day be utilized by the medical professionals as another useful tool for greater health care

Used to raise pigs for a living; I miss not being able to just go to the freezer and grab a package of prime, farm raised bacon, sausage, ham, etc... Now, all of those are treats; gall stone's and high blood pressure says that bacon is a once a week indulgence only. Of the store bought brands, I personally prefer Wright's thick cut, in apple wood or hickory smoked flavors. If you're going to only get to have it once in awhile, at least make it decent bacon...

Even though people love to eat bacon being the son of a pig farmer was never an easy task. All I have to do is ask my father about that, and he would tell me all the trouble that they had with the neighbors because of the ubiquitous pig however I grew up, loving bacon, lettuce, and tomato sandwiches, bacon and beans, bacon with breakfast any kindand even bacon rolled over beef and placed in a beef stew. Anyone born between 1900 and 1940 made bacon and eggs for breakfast a religion. Even my boomer parents sometimes have the traditional high fat, low fiber breakfast. I was surprised to learn that beans for breakfast used to be a thing in the US and I think it is time to bring that tradition back. Bacon isn't so bad if you have it with plenty of fiber. Throw in some oatmeal along with the beans and you have a high fiber, complete protein breakfast.

I think you're buying the wrong pork chops/bacon. You need to buy the ones marked 'organic', which just means it was made the way they used to make it before big agriculture ruined our diet. Same goes for veggies. Want veggies that taste good, buy organic. I know the terminology is stupid because any molecule with carbon in it is 'organic' but it is the procedures and limitations that come with the label that are the important thing.

Pork chops, bacon grease, pan hot enough until the grease smoke a bit, pork chops in for 3-4 minutes until a nice brown sear, flip, heat to low and cover. In 5 minutes insert quick read thermometer, I do cook pork to 160F. If thin chops I flip Cover and heat off. 180F or more and its a bit dry. Yes I never understood why anyone wanted to eat pork chops my mother murdered them. Oh, salt and pepper when they go in.

Crisco is worse for you than lard anyway. When I buy tortillas, I make sure the main ingredient is lard, as it should be. Can't make an authentic tortilla without lard. And I always have rendered bacon fat on hand. Always. A little dab mixed with a bit of olive oil tossed into your pasta or used to saute vegetables makes all the difference in the world.

When animal fat is treated in a chemical process, it is separated into glycerin (usevull in making explsives and a number of other thinks) and methyl stearate (which is similar to diesel fuel). This is how biodiesel can be made from animal fat. This is happening today, but may are still disposign of animal fat in land fills.

That's streaky bacon, belly bacon. Bacon in Britain, Ireland, Denmark and Australia can include delicious back or middle bacon rashers and can be a form of cured or smoked pork. My Welsh grandmother often served it with the rind on .. The smell of cooking bacon may even tempt vegetarians. American bacon is more like German speck.

In the oven - on a cooling rack - with a cookie sheet further below to catch the oil is the only way for me. The bacon is suspended - getting hot air circulating above *and more importantly from underneath. And it doesn't get wrinkled-up because it's not frying directly in its own grease. What you're left with is perfect, flat 100% crispy bacon like you've never had before.

Toronto was known as "Hog Town" because of its pork processing history. The Stockyards area was massive, and during WWII produced meat products for the UK.

I grew up in southern Indiana which produces something like 10% of the nation's pork. There are only like 3 states that produce more pork. If you live in the southwest, your pork was most likely raised in California. In the Midwest, you have about a 50% chance your pork was raised in Indiana. In the Atlantic region, a major portion of the pork comes from North Carolina and Virginia. If you live in the plains states, production is split mostly between IA, OK, SD. Texas is another significant pork producer. Part of the BBQ culture. They produce a lot of beef and pork. But per capita, the numbers really aren't as impressive as some other states. Southern Indiana has like 100x as many hogs as people.

Heck, I had a bacon sandwich for dinner tonight. I remember the smell and sight of bacon frying in the pan from as far back as I can remember. Not just at home, but the many summers at scout camp, it was almost always a staple in the morning.

A slab of unsliced bacon brought great comfort to many a cowboy or traveler. It wouldn't spoil quickly and unlike dried meat the bacon also provided oil/grease for other cooking uses.

Another tidbit to point out is that, in medieval times, the fat content in cured pork was also quite valuable to the diet at the time, providing calories that might not otherwise always be available. Today, we look at that as a health issue because the caloric content of our diets has gone up sharply over the past 150 years when subsistence farming gave way to industrial farming and food became cheaper and easier to get, along with caning and other technologies which meant that food could be preserved for much longer periods of time without adversely affecting its quality.

A sow produces a litter of 6-8 piglets every 3 months, three weeks and 3 days. That alone is incentive enough to make pork products a food staple. The fact that it tastes great just adds icing to the cake!

The supply of pigs to Calne was more subtle. The big market for pig was London, the pigs being driven there on their own feet. The weaker ones would not make it so were culled en route. As all of the pig is used (except the oink) Harris is also a well known brand for paint brushes and pork pies.

I'm old enough to recall when Scheneiders (a major meat products brand in Canada that used to be a separate company founded by J. M. Schneider, a German immigrant in the late 19th century) ran a series of commercials featuring J M. himself. One had a scene of a family dinner with a plate of carefully arranged bacon slices. The youngest son grabs and eats a slice, earning a brief scolding from J. M. When this ad ran, the youngest son mentioned was still alive.

During WWII the British government encouraged people to grow their own vegetables, and raise chickens and rabbits, even in the tiny 'gardens' in front of Victorian terraced houses. They also encouraged the formation of Pig Clubs, whereby people would cooperate in raising a pig. They'd feed it peelings and other food waste, and then share the meat. By the end of the war there were over 7000 pig clubs in England.

America's Test Kitchen was wrong: Few people like the same pork when uncured. It has to be made into bacon. The curing is essential, the fatty acids aren't the key.

This is because pork isn't what it used to be. Not because curing is magic. You put enough salt on a good pork chop and it will taste just like bacon. The irony is all the old timers saying 'it isn't the same' are the same ones who say 'grrr, I'm not paying extra for this 'organic' crap' when that's exactly what they need to eat if they want their food to taste like it did back in the stone age when they were growing up.

You put the maple syrup on after you cook it or you just ruin the maple syrup. But you're probably talking about "pancake syrup", which is corn syrup with some artificial flavor. What most people call 'maple syrup' isn't anything of the sort, and hasn't been for a long time. Even my boomer parents weren't putting actual maple syrup on their pancakes as kids. The only difference was that back then you could get away with calling the fake stuff 'maple syrup'. But Aunt Jemima has been the same since the '30s. Not actually maple syrup. These days, you can buy actual maple syrup at Costco. And it ain't cheap. About 20x the price of fake 'pancake syrup'.

It turns out that the unscientific belief that bacon is unhealthy was a myth. There is mounting evidence that fat, and saturated fat specifically, was never actually bad for you. Same with cholesterol, which your body makes in abundance no matter what you eat. Both, in fact, have always been known to be important nutrients, necessary for your health.

From my understanding is “it’s complicated”. There’s now considered good or bad cholesterol, and same goes with fat. Like trans fat is still considered very bad, but mono-unsaturated fat is good. Honestly though I don’t think about it too much. When bacon is available I just enjoy it.

Actually, vegetable fats are toxic to human beings to the extent that only 5% of vegetable fat that you eat is absorbed into your body. The body has a genetic mechanism which does not allow more to be absorbed. That's why diets that replace animal fat with vegetable fats help with weight loss, simply by using the body's natural non absorption of vegetable fats to lower calories. In my youth I worked on an old time 160 acre farm in southern Wisconsin, a mixed acreage of pasture, grass hay and alfalfa, corn for silage and oats. The farm carried about 150 dairy cows, an equal number of heifers and steers, calves and one Angus bull named Ralph. We also had a small oak and hickory woodlot and a very small old nearly abandoned apple orchard. We also had pigs, who loved the fallen apples, hickory nuts and acorns. Best pork I ever ate. What a treat.

When they changed the standard weight of a pack of bacon, like 45 years ago. Where have you been? It is probably your parent's generation who is responsible for still calling it a 'pound of bacon' long after it was only 12 ounces. You can also blame your parents for why you think Aunt Jemima is maple syrup. Bacon in the US, is just sliced salt pork. Bacon in the rest of the world is made from the loin and is an actual piece of meat, rather than a chunk of fat with a few streaks of flesh masquerading as meat.

Bacon becomes "sweet" In the frypan due to what is known as a Maillard reaction whereby the sugars and starches in the fat caramelize. Cooking bacon in the oven or microwave does not create the same flavor. You can pre-cook it that way to remove some of the fat, but finishing it in a pan is still best.
