With high-fat meats (aka pork) after roughly combining ingredients, if you mix going in a single direction (counter- or clockwise) it makes the meatballs, meatloaf, etc. more tender. Because the fat strandings get alined, so you can get something a kin to marbling or a grain to cut against. A woman who made dim sum taught me this trick and there is a noticeable differnces.
