It's hard for people to notice. I come from Professional experience, and no Lin Dan is not playing "defensively" nor "not using opportunities of smashing". He's simply playing very intelligently and wisely, purposely hitting certain shots so that the opponent could hit a certain shot he was anticipating. Lin Dan may seem like he's just playing defensively, but no, he is controlling the rally.

From my own experience as a player, forehand serve give you more options which are short, flick and high serves and the forehand movement will also give it a little more deception. But, the short forehand serve is a little more difficult to control the length and the spin of the shuttle, so most of players prefer short backhand serve. Meanwhile, backhand serve only have 2 options which are short serve and flick serve. Therefore, it is a little more difficult for the opponent to predict the forehand serve and will likely to act a fraction slower than with the backhand serve. High forehand serve also buy you more time before taking your opponent's shot. I also tend to use forehand serve to buy more time when I got tired or sometimes as a variation to make my opponent guess.
