Mochi-mochi Pan De Coco Bread Recipe
11 pieces
Dough:
200g ( 21 & 1/2 tbsp ) bread flour
60g ( 6 & 1/2 tbsp ) all-purpose flour
2 tbsp white sugar
1/2 tsp salt
2 tbsp unsalted butter (melted)
2 tbsp egg (beaten)
130ml water
1/2 tbsp white sugar
1 tsp dry yeast
Coconut Filling:
125g (1 & 1/2 cups ) fresh grated coconut
75 ml water
4 tbsp dark brown sugar / muscovado sugar
3 & 1/2 tbsp light brown sugar
1/2 tsp vanilla extract (optional)
Thickener:
1 tbsp all-purpose flour
1 tbsp water
Egg wash:
1 tsp egg yolk
1 tsp water
Topping:
Poppy seeds
160℃~165℃ electric oven
140℃~145℃ gas oven
Bake for 15~16 minutes
