I bake bread and I make my own cheese and my own wine.. and your video captures the significance of all of these activities. Sure, I can buy bread from the store, I can find cheese in the supermarket and I can get wine from the wine shop. But it's the joy of the experience in watching magic, real magic take place. And it's the pleasure found in removing that proudly risen loaf from the oven, tasting that wheel of cheese after a few months of aging, and pouring that bottle of country (or grape) wine for family and friends.

And thank you @cachef1! I've got pasta flour sitting in my cupboard, because "I've never made pasta before and I'm scared"! So I'm going to do it and if it's a mess, it's a mess. 🤗 I've been wondering if the "no knead" approach would work with a pasta dough, just the rest time then stretch and fold 2 or 3 times. 🤔

You made the same point as one of my very favorite books. That is "The Supper of the Lamb" by Fr Robert Farrar Capon. It is neither a cook book, a philosophical treatise, nor a recipe book, but interweaves all those facets together about the joy of REAL things and real experiences. It is by turns silly, joyous, hysterically funny (the parsley story will make you cry from laughter), and profound. I cannot recommend it highly enough.

Honestly I think it's a great video idea and you're spot on. I live in the US and store bought bread here isn't really bread in any traditional sense of the word...I don't even think it's real food 🤔 I grew up on homemade bread and after my RA got bad I just quit bothering. Quit eating bread unless someone was kind enough to gift me a "real" loaf. Started watching your videos and at first I only used your no knead technique...came out beautifully and I started gifting loaves to friends and neighbors. Then I was blessed to be put on a very good RA medication and now I'm back to regular kneaded loaves 😁 I feel my grandmother's presence every time I make bread. She's probably scolding me for not adding more flour...ha ha! Thank you for encouraging me to reconnect with my love of true, real bread. It truly is a joy to make...and eat!!

A great and appropriate video, especially for me today. I had not made bread for a month, having been abroad on holiday. The making of my sourdough today was like a religious experience. Putting on my apron and folding my towel; collecting the flours, seeds, salt and starter made ready from last night; mixing and folding as experience now tells me, doing it my way; resting and returning to see the wonderful rise; cutting and pre and final shaping and in the bannetons for tomorrows morning’s bake. So satisfying. Keep it up Jack. Your disciples are with you.

Ah, Jack, great video. You helped to get us back on the bread making experience. I love bread. I love it nearly as much as I love potatoes! My partner is not overly keen on bread but he makes bread every couple of if days now. One loaf for me, and the effort that he has gone to really makes me feel loved, and a second loaf for my mum so that she doesn't have to make bread unless she wants to. Sometimes I make bread too. Just because it's fun. Yesterday I unearthed a recipe for Cornish splits. I made eight and we had the most exquisite Cornish cream tea with local clotted cream and home made Elderberry jelly. That's what love looks like to us.

Great video. You’re a profound thinker and I like that a lot. The only time I bought supermarket sliced bread was when it was reduced to 7p a loaf and I’d get a couple and make bread pudding. As far as stopping feeling hungry, unnaturally thin models used to eat tissues to fill themselves up and imo much of the commercial bread is just thick puffy paper with more calories. (As such bread is cheaper than tissues and we need to save trees, maybe you could iron those slices and blow your nose on them. They’re biodegradable, I bet they’ll flush too...)

It takes me roughly 30 minutes to turn 1kg of flour into 24 soft rolls (30/70 rye/white), which is enough for a couple of weeks (I freeze 20 & defrost as needed). I think I've bought bread in the UK maybe twice after taking heed of Jack's instructions 6 or 7 years ago & starting to bake my own. I will however say industrial white bread here has one thing going for it: It's not quite as awful as the stuff you get in the USA...🤮🤮

@@gigi3242 Would you share the recipe when you get it where you want it. Every morning I have a piece of toasted sourdough and coffee. My dogs always wait patiently for the crust.

@@virginiatozier9957 when I get the recipe that "works" for me, I'll share it with you. There are a lot of different recipes, I just have to find the one that tastes like my memories, lol

@@virginiatozier9957 It would be really difficult for me to list the recipe here, because the process is quite long. If you search youtube, you will find some very good videos, there is even a channel called Salt Rising. The ingredient list is simple, but it is the process that is involved, and needs to be followed. There are two ways to make the "starter", one with potato, the other with corn meal; I am finding the corn meal stronger tasting, which I like, but you can try both methods, and see which suits you. You really shouldn't treat the starter like sourdough, it is a make it and use it thing, because the agent at work is a bacteria, not yeast. Oh, and yes, it is a super stinky process, lol
