Onion harvesting in hot climates must be so much simpler, these onions in the video look to be very dry even before being taken from the field but in our climate that just isn't often possible and there is a not insignificant indoor drying stage that is required most years before further processing can happen.

i live only about 10 miles from an onion farm so every fall we buy our onions directly from them. The last 3 years a 50 pound bag cost $15 directly from them otherwise before that it was $10 for a 50 pound bag for many years.

Human labor should not be used as a substitute for machines whenever possible. Having said that, companies that use machines to eliminate human labor should also pay a social cost. People should be allowed to live lives where they contribute to society, yet are not just a cheap substitute for a machine.

These onions are really getting beat up by all of this mechanical processing. Reminds me of my youth when they went to mechanical brussel sprout harvesting in the UK. They lost the US market because of the lower quality. If you want high quality buy from small local growers.
