I’ve never seen that done before, wiping a new glass fibre surface with acetone, to then laminate another layer of matting on top, then walk on the surface you’ve just cleaned. !! Anybody measuring and mixing the Catalyst into resin or gelcoat should be wearing goggles, as those plastic bottles are prone to split and as you rightly said ‘keep your head back away when mixing’. Personally I think that mat should have had more resin than you put on, it looked like 450g mat. Anybody that gets air bubbles in a flat area of laminating......... shouldn’t be working with fibreglass. !! I presume that float coat comes with the wax already added.
