i love the song that is played as an intro and when they go to break i acutally have an mp3 version of it and i play it on a boom box during my kid's soccer games and i dance to it on the sidelines when they score people love it

I swear I often combine both American and Italian foods in my cooking as I enjoy both. Mario makes an excellent point though, aggressively spicy to hot, I do think that as Americans we tend to overly season our food and that takes away from the natural good taste. I watch these episodes to learn cause you're never too old to learn more!

At 17:27 he said you can reduce the heat by not using the seeds of the peppers. That would HELP BUT, that's NOT where the heat comes from. It's from the spine inside the pepper. The spine is what infuses the SEEDS with heat. So, to remove the heat, you need to remove the SPINE AND the SEEDS.

Emilia- Romagna is not were Mario indicated. It's on the North Italy, he indicated the center. I tell it because I'm from Bologna, the Capitol city of Emilia- Romagna. If you take a political map of Italy, watch where Lombardia is, and Emilia-Romagna is right below it.

i just use regular olive oil not etra virgin its not to bad quite a bit more epsive than regular frying oils but og italy used it

Acually the "Guy In Red" Is Rocco Di Spirito, A famous NYC Chef and restaurateur of Italian Heritage like Mario.... He Know his shit! Unfortunately, fame and celebrity went to his head, due to a reality tv show in the early 2000's. In the aftermath of the dramatics, he Retired from being a Restaurateur. not sure what hes up to nowadays.

Growing up in a family where my grandmother was from Milan and gramps from Sicily, having 7 children, they all sounded and looked like him. The conversation was passionate no matter the subject. Everyone talked with, through, and finished each other's sentences. No offence was ever taken and arms flew with abandon. He isn't vain. He's simply in love with his subject.
