I was a Vietnamese refugee living in Cambodia for 3 years. It has been 20 years and I still miss this dish. Made it for my family watching this and love it! Thank you and tell your mom we say thank you!!!

Seriously I grew up Cambodian in Australia... Its not till I moved out that I now mimic what my mum made. I remember nearly everything but when I forget I come to your channel. You have no idea how much this channel has helped me! Thank you so much bong!!! I love hearing you mum talk in khmer as I have no one to talk to with it. Your mom cooks by taste which is a knowledge that passed down by generations before her. This is invaluable knowledge and she is passing forward not only to her children but to share it with all of us khmer new generation and the world, god bless her for her sharing heart. Thank you :)

@4:45 It is called in English: fingerroot or in Khmer: k'jeay (ខ្ជាយ). It is from a ginger family and a vital part of 'kroeung' (គ្រឿង), a pasty mixture of lemongrass, galangal, fingerroot, tumeric, kaffir lime leaves, garlic and shallots--a very important spices in Khmer cooking. And in that jar it is not 'pickled' but simply in 'brine' water, so it's not supposed to be sour or acidic.

I must say, nahk oum is my celeb... I have always admire her and her cooking. And love the accent. Thank you both for sharing our traditional recipes to the youngeons. i'm going to try an impress my dad with this. Hopefully, the one i make is better than his.. lol i haven't found one yet.

My mom makes a curry stew and instead of eating it with rice or bread she'll eat it with the noodles. She said that she plans to make the curry for this coming Khmer New Years so I plan to have it recorded. And my nieces are pretty good with Khmer food. You'll be amazed by what they eat.

YUM! i like your mothers recipe & how you & your mom are cooking together. I been wanting to learn how to make nom pa choke for the longest. I'm not sure if your family eats it with a sauce ( like a tamarind peanut sauce.) but its hella good. thanks for a recipes! hope to see new ones soon :)

the "rhizome" is kachai...sounds more like kjee-ay. it is a root related to turmeric, galanga, ginger etc. sometimes it is called lesser galingale in english. love this dish, I cook it at least twice a year for my daughter it is her favorite.Thanks for the video, love your mom!

How does it taste with a bit of coconut milk? Does it make the soup taste thicker? I'm not sure how to explain haha. But I always wanted to try making it with coconut milk on my own since my mom does not like adding coconut milk when she makes it. Thank you for sharing your family's recipe! My mom and I prefer blending the ingredients: the lemongrass, rhizome, garlic, the pahok, etc in a blender to give it a smooth texture. Then we mash the fish bits in a mortar and pestle.

Kcheay is called fingerroot. Rhizome is just any kind of root that is closed to a bulb. Good recipe. Thank you and your mom for the video.

We ran out of kwah ko awhile ago :(. I need to make some more or something! But its so bad for me right now especially when I'm on a diet lol. I'll definitely let her know though, she'll be very happy. She likes to hear what people say about her cooking on youtube.

Even though you are from America and I am from Australia we all have the same cooking utensils in our homes! LOL It's awesome, that super Asian basket, the wooden mortar and pestle, the pots, and those bowls too! Also I was wondering does your mum know how to make the sweet paste that goes with the num bajok? Not many Khmay people know how to make it :( my grandma use to know but sadly she doesn't remember anymore because of her age. I hope you can reply back :) Thanks Bong!

Ena Sim you can find it on KZbin sweet soure from Siem reap but it is so difficult to make sweet source for Cambodia noodle. Normally I just put more sugar in 🤣🤣🤣🤣

just about the same way my mom-in- law makes it ..she showed me how to but for some reason i can never remember the recipe and well am scared to ask her again since she taught it to me a a few times lol. Funny story... growing up when my mom would make num bank chok, she would use can tuna the Chicken of the Sea brand b/c she thought it was actually chicken in there. LOL!!! anyways your mom's recipe looks yummy so ill be trying that soon. Thanx!

I'm not familiar with Cambodian/Thai cuisine but the dishes seems so healthy - of course I've been replacing beef and pork with either chicken or turkey meat.
