Authentic Pad Thai is usually something you refer to a restaurant to make, but I'm telling you now that you can make it and it very well may be the best thing you've ever had. It's not a difficult recipe to make at home, all it takes is a little technique.

Just some tips from a Thai person who loves to cook as much as you all ;) : - For palm sugar, if you wrap it around with moist kitchen paper and pop it in the microwave for 10-15 seconds, it'll be easier to break. - Usually, we don't use black soy sauce, otherwise, we call the dish "pad see ew". ( I mentioned it because you call this recipe " Authentic pad Thai".) The main ingredients for an authentic pad thai sauce mostly are tamarind puree, shallot, palm sugar, and fish sauce. - For pork marinade, use oyster sauce and ''thin'' soy sauce instead of black soy sauce. it will give you a smoother flavor. the sweet back soy sauce will leave a metallic aftertaste. - There are 2 types of pickled daikon, sweet and salty. Go for the sweet pickle :) - I live in Europe, so it's a bit expensive to get all ingredients from an Asian supermarket. Alternative for some ingredients: Chives > spring onion, bean sprout > shredded carrots - crushed roasted peanut and pepper flakes will give you more texture and spice it up. - Noodle of your choice: But I would suggest ''Jantaburi rice noodle'' size 3mm (the logo is a lady wear a sun hat on an orange strip), it's one of the most favorite noodles among Thai people. Not sure if this is authentic, but I was taught to make chili paste ahead of time and use it as a base.. lots of dried chilies, and a lot of the ingredients Josh used (tamarind paste, palm sugar, fish sauce, etc.). The plus to making the chili paste base is you can use it in other dishes like Tom Yum, Massaman, etc.

As a Thai, I can assure you that this recipe is very close to the one you'll find in a Thai restaurant in Thailand. However, most pad Thai that serve in Thailand usually have shrimp or prawn rather than chicken, and probably won't add as much dark soy sauce or sweet dark soy sauce as this recipe but that depends on each restaurant recipe.

​@@Joe_Murphy-REV_Realty Thai people don't really use Sriracha. Most place in Thailand, they normally put chilli flakes on the side of the plate unless you ask. And if you still need more spicy just add more chilli flakes not Sriracha.

That's good to know because this tasted nothing like I expected. It was very tangy and reminded me of adobo. Honestly I much prefer the sweet/spicy peanut americanized version. It was good though don't get me wrong! And fun to make!

Try fermented fish paste, add a little for a similar funk. Read the labels though as it can still sometimes be shrimp 🍤

Seriously the best meal I ever had in my life was pad thai in a hotel room in Thailand. Legit, I'll never forget it. It was so amazing. I hadn't eaten all day before hand.. and I'd been trekking around all day... Finally got to the hotel room and ordered this. Best meal of my life litteraly.

@@krisi4168 if she is allergic to ONLY shrimp/seafood and not fish in general, maybe try bonito flakes? I guess it will be a lil diff but will still give a back umami flavour

@@krisi4168 You can use dried mushrooms with a bit of soy sauce and some browned garlic (be careful not to burn it, but it should have more colour than you normally would do, or use black garlic if you have it!), that's my go to for replacing the various types of "fishy/salty/umami" flavour profiles that you find in South-East-Asian cooking when vegan relatives come around. Oyster sauce works too, if she isn't allergic to those, though it is a more pronounced flavour.

wow This impress me so much. He's not only use the authentic ingredients(mostly) but his process is absolutely correct. Most of Thai cook never do this process we just stir dried shrimp ,red onion ,sweet daikon and egg together cause it's a easy way. As a Thai cook I could say he's the best foreigner who cook Phad Thai.

@@reinventingada Classically we do not. But the recipe is vary. There're a lot of variation of it. For instances: Any Pad Thai(Shrimp, chicken beef) wrap with thin egg (Quite hard to find in foreign country). Also Josh might miss 1 ingredient which is fried tofu. But some people don't like it or allergic to it so it's optional, but for the real authentic you will need it.

​@@premnakhonwilai3534 I'm aware of the proteins preference here in the U.S. I'm Thai and have had all kinds of Pad Thai both in U.S. and Thailand (and some other 20 something countries). There's no fried tofu in Pad Thai. We use "yellow tofu" in Thailand and the closest substitution in the U.S. is baked tofu. I know my food and don't like when people say "authentic xyz" when they clearly don't know what's going on. We also don't use corn starch and white pepper in Pad Thai, if you want to make your own version, go for it. There's no need to be the Thai food expert and call it "authentic"

This is the first recipe I think I’ve seen where the peanuts could be easily taken out of the equation to accommodate for an allergy. I’m insanely allergic to all tree nuts and peanuts and this makes me so happy. I can’t wait to try this

As a Thai person, I DO APPROVE THIS RECIPE. I’ve seen a lot of Pad Thai nightmares on KZbin but trust me this one is gonna be good. One thing if I may add: make it with shrimp rather than chicken because that’s how we eat it here in Thailand. And don’t forget to sprinkle some Thai chili flakes on top to spice it up!

@@emilymeza9241 I'm in San Angelo, TX. We have a small Asian market near the ASU campus. The advantage of being a military and college town, I reckon. Laredo has three times the population of Angelo. But I cry every time I hear my cousins in San Antonio mention all the German bakeries, shops and restaurants there. Haven't had really good German bread in decades.

"It is not hard to make". Proceeds to use a big Wok on Gas which most people do not have and is alot better for the high heat. Uses almost exclusively ingredients I cannot get easily and have no other use for me except in ther recipe so it is a bit of a waste to order them online. Yeaah. Not easy at all. I bet it tastes good but pass on this one.

My second time making it. Fantastic!!! I doubled the chicken and did 9 oz of noodles. I cooked my eggs in a separate pan, because my first time I mixed before fully cooked and got everything stuck together. Lesson learned, I will probably make this in another week. Better than take out.

As a Thai person your pad Thai is very accurate! The inclusion of the daikon is spot on and the tamarind juice cannot be skipped! You should make some crispy Thai oyster omlette (หอยทอด) as well lol these two dishes are often served together 👌

Quick question about the tamarind juice: Is it okay to use this somewhat processed, light brown and quite fluid tamarind paste you find in most asian markets instead of those more natural bricks? I can imagine that the latter have a bit more flavor than just sour, but I haven't seen them anywhere in my city...

​@@richardlohmann4013 Yeah those works fine as a substitute, I use it too. Back in Thailand, we have an even fresher version of that "natural bricks". In the end, you always juice the tamarind before you use it with anything, so you'll end up having fluid tamarind either way. It won't be the best tamarind in the world, but tamarind nonetheless.

Also just in case people don’t live nearby an Asian marketplace or grocery store, you can easily find tamarind pulp and dried shrimp from most Mexican/Hispanic grocery stores!

Made this recipe and was inspired to GO to my local international market to get ingredients I didn't have. Family said they thought it could have been more sweet (which is odd, b/c they usually don't like sweet) so I'll put one more palm sugar. This looks great! I just got back from Thailand 2 days ago. A few things, I found this dish is served with a fried egg on the side or on top, the bean sprouts were also on the side, with a sprig of green onion, also on the side were piles of Sugar, ground Thai chili peppers, ground peanuts, and lime wedges. The only thing stir fried together was the noodles, sauce, and shallots. I don't remember the ground dried shrimp in there, there were a few dried shrimps on top though, possible some shrimp paste somewhere in the sauce, but if so it was not as much as you used. And it was simple and delicious, and PHED!

In asia there are many layers of ingrident to make just simple meal and mostly it crush, grind, slice very thinly or make it out all the ingrident on blender and smooth it so it make a good sauce. For example when you cowok gado gado you crush all ingrident ( mostly you will put terasi or petis ( fermented prawn)) and top it or glazed or combine all of it in one pot. And may i remind you there are several ways to cool a dish in asia and it usually depend on the region they come from but there are also universal way to cool that mostly of the people usually cook in that country. Soo cooking asia dish never simple :)

I'm from Thailand and honestly Josh nailed it. but I would start with low heat because you don't want garlic, shrimp and shallot to burn. Also try simmering sauce first to bring out more flavor and chili flakes instead of pepper for a kick.

Fun fact: Pad Thai is actually a Southern Chinese noodle dish packaged as a Thai dish by the then Thai Prime Minister Phibunsongkhram to solve hunger and nutrition issues in the country in 1930s. Pad Thai uses Chinese noodles, dried shrimp, tofu, bean sprouts, which are all traditional Southern Chinese ingredients. The only Thai element in the dish is the peanut sauce.

OK, you got it partly right, but you need to read more than one source to get the full picture. Wiki doesn't cut it. It was really invented to promote nationalism and pride, and to be a symbol of Thainess. The hunger and nutrition part came as a result of shortages in the wake of WW2.

The great thing about Wikipedia is that there isn't just one author that can promote his own agenda and beliefs, like most books and sources, Wikipedia has tens of millions of authors and peers all over the world fact-checking its articles to make sure they are objectively non-biased and true. It's the ultimate source of information that's been reviewed and approved by a large and varied demographics and this is why universities have accepted Wikipedia as a legit source for years.

For those following along, the “zakai” he mentions can be found by searching for Thai pickled radishes. He lists it as “zha cai” which is the Chinese pinyin but I’ve seen it referred to as “huah chai” or “hua chai bpoh” or something like that as well.

Killin it Josh. Been trying super hard to learn how to make this disk myself because it’s easily a top 3 favorite dish to eat for me. Gotten a lot of the ingredients along the way but I know my dish is still slightly off without real tamarind paste/juice and the Palm Sugar. I even got the fish oil already, but I think I’m ready to give it another go with ALL the full ingredients. Glad to see it’s absolutely possible to super authentic Pad Thai in my own home!

In Thailand, you can use green onion together with green chive or just only green chive. In Thai, we call green chive "กุยช่าย gui-chaai".

@@TheSwauzz not typical chili powder with cumin, garlic, etc. but red chili powder found in asian markets. Super spicy and so good! I would sub crushed red chili flakes. You just need some heat 🌶️🔥

As a Thai, I 100% approve!!! Although different regions will change up the sauce a bit, usually with the addition of dark soy sauce, this is as authentic as you can get!
