The young Latinos who spew venom against Rick Bayless in many instances don't know what culture is about. Culture spreads. This is the way it works. It's constantly in motion, taking this or that from other cultures. Rick Bayless is keeping Mexican culture alive in the U.S. by educating Americans about Mexican food, its origins, its connections to regions. He always calls the dishes by their original Spanish names, he's constantly referencing its Mexican origins, and he learned not with chefs, but by going directly to the kitchens of townsfolk, and the cooks in street stalls. This is how you keep culture alive, by spreading it. As for the folks who think that culture is authentic or fake, please stop to consider that there is no such thing as "authentic" culture, because culture is simply always evolving by taking in the new and transforming the old. Do you claim that Mexicans appropriated Spanish food when they took garlic (which was brought by the Spaniards) and began to use it as one of the core ingredients in their food? How about mangos, tamarinds, onions, and pork itself, which was also brought over by the Spaniards? At which point in history did the garlic become "an authentic Mexican ingredient"? My question is absurd! Did Italians appropriate Aztec food when they integrated the tomato into their food? Of course not. These are absurd assumptions. Culture es kept alive by spreading it. You want to know who appropriates culture? American corporations like Disney, so if you are enraged by Bayless and loved the Disney movie, CoCo, you need to take a breather and start reading about history, culture, and identity. I'd start with "Hybrid Cultures" by Garcia Canclini.

BRAVO! Norma Vega! Beautifully said! Sadly, the reason young Latinos spew venom, as you say, is because they have been raised in a society that is promoting division between the races. Rather than embrace, celebrate, and incorporate our Cultures... many, many, "non-whites" are being indoctrinated to resent, hate, and find fault with everything the White Man does. It has been a year since I finally discovered pork carnitas. I fell in love with them. We finally got a Mexican restaurant that does real deal Mexican cooking. I'll never look at the local Taco Bell or chain Mexican food restaurant again. Rick Bayless is a world class chef. Thank You Rick for showing me how to make them at home. I am going to make the tomotito's /avocado sauce also.

When I was traveling thru Mexico as a chef making Carnitas in Cuernavaca we used lard, oregano, bay leaves oranges and coca cola. There are so many different ways to prepare them, it has variations in every state in Mexico. Cuernavaca is in Morales, very nice place. I have total respect for Rick, he has the number one rated Mexican restaurant in Chicago called Frontera Grill on North Clark Street. He has Salsas and sauce in most grocery stores and authored many cookbooks. There are about 20 of his cookbooks available on Amazon.

I don't understand all the hate spewed over this guy. Sure he's a white guy from Chicago, not of Latin descent but does that make him incapable of learning about and educating other about the wonderful foods of Mexico? Not everyone has the benefit of family to teach them this cuisine. Would you rather he be out there disparaging the people, food and culture of Mexico? Rick is not out there advocating walls, he's building bridges through cuisine. We have people like Trump to promote walls. So yes he doesn't preach how your Abuelita did it, but before you criticize consider that maybe he is trying to make these recipes accessible to a broad variety of food enthusiasts who have either limited experience, talent or access to ingredients. Appreciate him for where his heart is. Like me, he loves Mexico and wants to share that. By doing so doesn't he make things better? By learning more about each other's cultural differences don't we become more tolerant? Tolerant, now there's a concept many on this thread might think about. Oh and before some of you flame me, I understand how things work here online. I'm not hating on those who blast Rick in earlier comments. I understand that much of the nastiness comes from what I assume is a pride in heritage, origin and culture. It's easy to fly off the handle in this environment especially when you are anonymous and miles away from those you disagree with. So please take my comments as constructive and not meant to offend. But if you must flame please give me a chance to get some chiles, onion, tomato and garlic to out and char them for some salsa!

Very well said. I agree. To know that mexican culture and cuisine is appreciated brings joy to my heart. RB is a great chef and loves Mexico. I will rather use the Food Wishes recipe to make carnitas though :) but other of his recipies are delish, like Mexican paella :)

Thank you Rick for your opinions, experiences and expertise when cooking Mexican dishes. I was born in Mexico and have traveled all through the country experiencing the different flavors, customs, dishes, drinks, amazing colors and amazing warm people (most of them) as well as the incredible customer service experiences in most of the places that I have visited. I was even lucky enough to visit Chicago's airport on my way to another city and ate at your Tortas restaurant in the airport. The authentic flavors brought me back to my beloved Mexico. Thank you so very much, and please keep doing what you do. You are one of the very best!

I do something similar with spare rib scraps from trimming my ribs for St. Louis style. Originally I was just cooking the scraps for my dog, I added a little salt to the meat and added about 1/2 cup of water to a skillet on the stove top and covered to braise for about 30 min. on med and reduced to med-low, add water as needed, removed the lid and browned the meat after the water evaporated. After I tested the taste before serving, I decided to share it with my dog instead, lol !!!

Being a chef is not about cooking the same old same old. I've watched Rick for years and even made some of his dishes and they are delicious. I'm sure I didn't do his recipe or experience justice but he Makes you want to try something new and deliciuos.

The reason you might cook the carnitas "just with salt", is so that you can actually taste the pork. No law is being broken by adding some orange rind or juice, or bay leaves, or cinnamon, or allspice, or chunks of hot fresh pepper. Our kitchens are not usually equipped with large caldrons of frying oil. He is describing a very good method of replicating that, in a home kitchen......using just one pot (a roasting pan).

My favorite Mexican dine in restaurant franchise was casa de Jimenez in LA county, for $12 they had a lunch buffet that you ordered ala cart. Basically unlimited made to order chili rellenos, enchiladas, and endless fresh fried carnitas brought to the table 5 minutes after ordering for $12. Those carnitas and Spanish rice with copious lemon drizzled over top satisfied my originally Filipino palate so thoroughly every time, I don't think any other countries cuisine buffet could have with their pork standard pork from a serving tray offerings.

Cliff Notes: Try not to focus on RB's methodology. The essence of what he's trying to say here is that carnitas is crispy on the outside, succulent on the inside with flavors locked in. It doesn't matter how you finish the race. What matters is that you finish the race.

He is saying “I developed the absolute simplest recipe” which is a recipe that most of us can prepare, but yes, real carnitas are prepared with various spices and orange juice among other ingredients.

It really depends, there are lots of Mexican restaurants here in the US and Mexico where they make them without any spices or juice to marinate. They do chop them or shred them to later pan fry them with manteca or lard after they roast the meat though.

They may prepare it with various spices and orange juice, but generally that is not the basic carnitas recipe. What you described sounds more like cochinita pibil.

Those ingredients are different version of carnitas. Many recipes are original to locations (different parts of mexico or south America) and alot of original recipes have been tweak to accommodate personal tastes and accessibility to ingredients.

@1too3fore; It is, I developed a stove top method cooking pork spare-rib scraps for my dog and it tasted pretty damn good and close enough for a gringo, lol!!! See my post above for technique , time and temps may vary depending on the amount of pork, for larger quantities follow Rick B's oven method for sure !!!
