A griddle or cast-iron pan seems to give the best uniform sear to a steak. If you didn't tell us otherwise, I would have guessed that was a bone in ribeye. Nicely done Tom.

That griddle insert looks cool! As for the steak, pretty sure the package was mislabeled and that's a ribeye instead of sirloin tip (which is actually a tougher cut from the round).
