All I have to say is mmmmm. I found fair trade, habitat friendly red palm (nutiva) oil at Whole Foods. If you're not a green pepper fan, use all yellow, orange and red. I did and it was gorgeous. Make this now, people.

This recipe turned out delicious! I added shrimp at the end. One poblano pepper. Needed extra liquid. I used extra tomatoes. Lots of the red palm oil.

In the original recipe, we don't use any coconut oil. Its dendê oil because the whole pupose of this recipe is this oil. If you change that you are doing something else, ok? The coconut milk is also pretty important for this dish's flavor profile. Also de Dendê oil is used for last in the recipe and not as a starter oil as she shows, because we don't want any saturated fat besides the fish and/or seafood.

Real moqueca doesn’t this afro style. It’s is just a stew from Bahia. There is no dendê or coconut milk. Real moqueca is from Espírito Santo.

About moqueca: dende oil is essential. You can try to look for organic/environment friendly brands, but a real moqueca bahiana (from the state of Bahia) requires dende oil, or it won't taste as good. The same goes for the cilantro. It's also supposed to be a really spicy dish, so don't be afraid of using pepper. Besides fish you can also use shrimp (it's better when you use both).

Might want to cook it a little before you throw it in the pot or simmer it longer. Chicken takes longer to cook than fish.

i am so making this soup! hey i looked up that brand of cachaca, & holy smokes at "total wine and more" they charge $37.00 for that puppy. ill probably get it anyways (lol) but is there another brand you'd recommend thats a little cheaper but still decent? Washington taxes an outrageous amount on alcohol as well :-(

caçaca has the taste and smell of tequila but goes down like a top shelf vodka! it kinda of reminds you of a mojito without bacardi and mint leaf! Now that I think a mint leaf would be perfect with this drink

It's not even just rainforest destruction (although that's critical enough), it's also about species extinction. We're in the 6th mass extinction, for the first time primarily human caused, and palm oil production is having horrible impacts. Extinction is forever, substituting a different oil seems like a more than reasonable thing to do...

As a brazilian I did not like this recipe. I appreciate your effort, but this is not a good looking moqueca. I do not even know if I can call this "moqueca". First, you forgot an essential ingredients, the anatto (urucum or colorau in Portuguese). The cilantro and the palm oil must go in the end (because they lose the taste). Boiled eggs should be added also, and red pepper (although not essential). This dish should not have black pepper or cumin. If you want to stir-fry some onions and garlic you should do it with olive oil (and by the way that was way too much garlic). Furthermore, in the moqueca it is essential that the vegetables, specially the tomato, start cooking along with the fish. Fish cooks very fast and so the tomato. Therefore, you dont want to over cook the tomato or the onions, as they are part of the dish. This reminds me that you should not use a hard fish such as cod. And talking about tomato, it was sad to see tomato sauce being added to the broth that should be light and bring up all the flavors of the dish. Another reason you do not want to use tomato sauce is because you are gonna use the broth to prepare the pirão (which is the broth thickened with yuka or cassava flour) as a side for the dish.

@@taigalul ovo cozido é coisa de moqueca do litoral pernambucano. Morei la na infância. Porém creio que o coloral e o coentro são temperos usados no Brasil inteiro - sendo o coentro quase que essencial. O que eu nunca vi é usarem salsinha ou cebolinha na moqueca. E olha q ja morei comi moqueca no Pará, no Goiás, em Minas, no RJ, em PE, no Alagoas, na Paraíba e no RN. Em todos havia coentro.

The dish should not be stirred whilie it is cooking to not damage the fish and we use anatto to give color and taste, not paprika. Nobody ever mentions the impacts of consuming beef and its relation to devastation of rainforests. But palm oil should be the culprit. Oh please. Besides, moqueca is not a soup, pirao is not porridge and you don't use tomato sauce on the moqueca.

The dendê palm oil is the worst fat you can find, it a true artery clogger. Olive oil is much tastier in this recipe! Also, moqueca is not soup, is stew.

Kayo, you are absolutely right about the dendê oil! that´s why, instead of starting to make a moqueca with this oil and soaking all the ingredients with it, like the original recipe says, one should reverse that in just adding a very small amount just before serving, like we do it in our Restaurant in Salvador, Bahia the Tudo Azul because we realized in our 15 yrs of serving this dish, that our customers from abroad, could not handle the heaviness of this oil... Montezuma's revenge:)

Kurt Muller That sounds perfect. I think dendê is full of flavor, however it is so heavy on the stomach. I grew up in Espírito Santo where as you know, people make the ‘lighter’ moqueca. No dendê and no coconut milk. But my grandmother was originally from Bahia and she flat out abused dendê. Subsequently her, my aunts and uncles and my father suffered from high blood pressure, high cholesterol and what not. That is why I’m reluctant with it. It’s a very flavorsome, characteristic oil but I also believe one can get too much of a good thing. Moqueca doesn’t need to be drowned in it. How you make it in the restaurant sounds perfect! I just might come and try. Obrigado.

The amount of meat should be higher than the amount of liquid, we do not eat with a spoon, but with a fork, with rice and other side dishes. It is a stew with lots of sauce, as it is Boeuf Bourguignon.
