Brazilian Moqueca is a seafood stew hailing from the Bahia region; the best-kept secret of Northeastern Brazil. The capital city of Salvador is a coastal town, so it's no surprise that seafood is the main staple of that community. Moqueca incorporates a local product with African roots. Dembe oil, or red palm oil, is used in dishes like Moqueca and Acaraje (black eye pea-fritters), but its origin is in West Africa. African culture can be seen all throughout Brazil, especially during festivals and Carnival! The Dembe oil is what gives the Moqueca its signature color and flavor. Ingredients
3 tablespoons Dembe oil (substitute 1 tsp paprika and 1 tsp tomato paste)
1/2 white onion, sliced
1 red bell pepper, diced
1 jalapeno pepper, seeded, julienne
3 cloves garlic
3 ripe plum tomatoes, diced
Kosher salt and pepper to taste
1/2 teaspoon sazon seasoning (optional)
1/2 teaspoon coriander
1/2 teaspoon cumin
1 (14-ounce) can of coconut milk
8 ounces Halibut (or another firm white fish)
1/2 pound large shrimp, peeled and deveined
Seafood or chicken stock, as needed
