Something that I’ve found makes a difference in getting a deep golden brown when using corn starch is to fry it once for a couple minutes then taking it out and letting it cook then frying it again for another minute. Really makes a difference when making a tempura batter.

The easiest way for crunch and to “bread” the chicken my husband and I found out that equal parts flour and cornstarch and add seltzer water to the thickness you want and we just throw all the chicken in and take out and fry by pieces LIFECHANGING with like no effort
