Underrated can be a good thing. There are many cuisines that need to have enough spotlight, be it Filipino, Paraguayan, Mongolian, and Tunisian cusine. Bulalo is my #1 favourite Filipino food as a Filipino born American raised and naturalized man! 😋😋😋

Underrated because the stuff that gets promoted are so ordinary. Palabok may be interesting. But it doesnt taste great. Bulalo is too expensive and most of the time the restaurant just give you regular beef soup.

Many of the flavorful Filipino cuisine come from the Bicol Region with their spices, in Pampanga, as well as in Mindanao with their Halal-based Filipino dishes. Lots of food from those regions are VERY underrated and not showcased that much in Filipino cuisine.

@@yuko6794 maybe you've eaten another dish of that. Maybe its the root node or contained some of the stalk of it or maybe the dish you've eaten was undercooked. Pinangat are 'gabi' leaves prepared dried or fresh with some native spices and cooked for a long time soaked in coconut milk until it reduces. The leaves are not itchy which is the main ingridient of pinangat, it's the stalk and root which are itchy. If you've eaten which you feel like a slimy in texture, you've probably eaten a dish that contained a stalk of that gabi. Pure leaves-Pinangat long cooked in coconut milk should be creamy, melts-in-your-mouth texture. There are 2 types of it maybe you've eaten the "inulukan" which is stuffed version of pinangat.

The “orange sauce” for palabok is actually a shrimp sauce (shrimp shells including heads and tails are boiled and thickened hence all the rich flavors are there) - or at least the authentic sauce for palabok should be 😊❤️🙏. Yummy!

Love the inclusion of bulalo. When my family does occasionally go to a filo restaurant they'll always make sure they get sinigang but I'll always ask if we can get bulalo as well as I'm worried it won't be a default dish. I've been hooked since my relatives and I ate at some outdoor tiny "restaurant" at the side of a river that had the most delicious subtle bone broth flavour. Of course giant ass leg bone included so there was lots of marrow go around Also can't say no to some palabok. At Christmas parties I'll fill my plate with everything and go back for seconds, thirds etc. Sometimes one of those helpings is dedicated to palabok. Or it's a late entree after the main haha

@@travelloloDifferent strokes for different folks BUT as someone who is American AND half Filipino, I would have to agree with you on this. Authentic Italian style spaghetti is far superior to Filipino style spaghetti. I "like" Filipino style sweet spaghetti but I LOVE authentic Italian spaghetti! Most Filipino Food is either hit or miss..... it's either REALLY bad or it's REALLY good. Spaghetti w/Meatballs blows Filipino spaghetti out of the water! Like I said, this is me speaking as an American who's half white (Welsh) & half Filipino, on my Dad's side.

@joshuadiaz2330 It's sad that many Filipinos have never even tried authentic spaghetti or Italian food. If you start eating the good stuff first, then you will know the substandard food. Same with pizza, my wife, who was in the US for 8 years can't stand Filipino pizza because it has fake cheese.

I grew up eating both American Food & Filipino Food but I think I've eaten more American Food than Filipino Food in my lifetime. My Mom's side of the Family is from Kansas so I grew up eating Steak, Potatoes, Chicken Fried Steak, Pork Chops, Hash Browns, Omelette's, Eggs, Bacon, Kraft Mac & Cheese, Top Ramen & Hamburger Helper. Not to mention Hamburgers, Hot Dogs, Ribs, Grits, Potato salad & other American Food. However, on the other hand, I ALSO grew up eating Lumpia, Pancit, Rice, Sinigang, Filipino Adobo, Diniguan, Sweet Rice, Chocolate Rice, Ube, Halo Halo & other Filipino dishes because my Dad is an immigrant from the Philippines. Over the past 15-20 years I've experimented & sampled other cuisines from other countries & cultures from around the World too. Filipino Food is an acquired taste & so is American Food from a foreigners perspective. Luckily, I've had a few experiences with both authentic Italian & Greek Food, even though I didn't grow up with it. Any cuisine affiliated with Mediterranean Food is amazing Food. Italians have an amazing pallet & phenomenal skills in the kitchen. I'm sure not all Italians know how to cook but the ones who do? Fantastic! Even non Italians who were trained to cook traditionally Italian can create amazing food. Mexican 🌮🌯 Food is awesome 😎 too! Non fast Food high quality authentic Mexican kitchens are Top Tier & Top Notch Food! Filipino Food is amazing too but only certain specific dishes & cuisine's. I concede that Filipino Food has traditional all star dishes too but Mexican & Italian are usually elevated in flavor overall. Indian Food spices/ingredients are awesome 😎 too! I love me some good quality Indian Food.

My mom knows how to make authentic italian pasta recipes and it's far better. *we have more pasta dishes we don't show to other foreigners for the reason they might not like it* Like the way you just explained it hurts me a bit but understandable. Edit: not all "filipinized" food are bad.. that's an overstatement. We have chinese dishes that's not as bad as the sweet spaghetti.

I've never been to the Philippines. However, I was graced with having several as co-workers. A lovely older couple were away from their family back home so they would invite me and my family over to try their cuisine. I cannot remember any of the names of these dishes but man, were they delicious. Some super spicy, most just a new flavor sensation. Sadly, at the time (nearly 20 years ago) they could not source all the things they wanted in our landlocked state. Since then between Asian markets now everywhere and the convenience of online ordering I think I will attempt to cook some dishes myself as the couple went back to the Philippines to retire with their family.

I never liked pancit but Palabok is really nice. And if you want bulalo, then you will love Nilagang Baka with Ampalaya (Beef Stew with Bittergourd).
