I lived on the road from age 18-25. Now I am 40. Although I did eventually get off the road, I have never regretted those formative years living as a nomad. To this day consider that time as time well spent, and wouldn't be the person I am now had I not had all those experiences and adventures.

hey!! as a half French half Italian with a long line of Italian women before me who taught each other and then me to cook, here are a few notes: overall, fantastic job, especially for a first time. I don't know anyone who's a pro at folding and marking gnocci on a fork the first time or even the tenth time they do it. There are as many ways to cook gnocci as there are Italian regions, and perhaps more accurately, Italian families. My Italian half is from the Turin region and I was born in Bourgogne in France, so that's a lot of cooking tradition bundled into a single family, but here is how my great-grandma would cook gnocci for my mom, who then taught me. First, the only thing I would say could improve is your gnocco (the gnocco is the big ball of dought before you split it into individual gnocci). It's a bit dry. It already looked a bit too dry but then at 5:00 you added the rest of the flour and I thought instantly that you shouldn't have. The gnocco should be a bit sticky because it'll dry as it rests and even as you cook it (if you pan fry, which you did. If you just boil, it's less important to have the perfect moisture tho a gnocco too dry that's then boiled can become too chewy and stick to your teeth and gums uncomfortably). So if you make your gnocco less dry, that'll make some difference. The second thing is the "sauce" (though you didn't really make a sauce, more of a flavour accompagniment). But again, there are as many sauces as there are Italian moms and every single one of them will tell you that your family's sauce is the best sauce. So our version is overripe tomatoes in a pan, left to melt for like an hour on very low heat and then reduce until most of the water content is gone and you have almost a paste. Then caramelise onions and whole garlic clove in another pan with oil, salt, pepper, then add garlic again (chopped). the cloves should be cooked slow so that the outside is caramelised but inside it's like butter. Grill some lardons and keep the fat it renders. Mix everything with the tomato paste until it's all covered. There should be little to no moisture. Then boil your gnocci, pan fry for a little while after and mix them with the tomato mix. Finally, add a couple spoons of gnocci water on top to soften the tomato paste over the gnocci when they're in your plate. Add parmesan. Ok now that I've given away the sacred family recipe, I hope you make gnocci again someday and enjoy them your way and pass it down to your own friends and family! I love watching your videos, as someone who lives deep in the French mountains and loves being in nature here, it's so cool to see nature from around the world.

Omg. Never heard anyone make no chi from scratch. Every restraunt I go when no chi on menu I try it out. So far on in SF -Florence by Night -the best. I have made them and I really like to taste the potatoe mixed with flour. Been told to bake the potatoes. Going onto the sauce - my aunt sautés onion and tomatoe sauce - thennnn mix in the cinnamon with sugar. To die for. From the Verona region of Italy. Otherwise I like pesto sauce. Yeah I also curl the nochi on a fork. Omg. I want some Nochis now. Yummmmmm

One of my favorite lakes . (Lake Crescent )I used to live near by on another small lake. Gotta love the Olympic coast especially this time of year. I know you have been to Rialto beach but have you hiked the La push beaches? Especially Third beach. It has a trail that is really long and scenic. Keep the viogs coming! Cheers!
