Not totally surprising. Chinese is a very inflection-based language, so the fact that specific words/characters require you to specify accents and inflections for the AI will make it sound a bit more natural than a completely phonetic language like English, where the verbal inflections are less obvious and context-based, forcing it to guess a bit. Unless you're talking about the actual translation/grammar, which wasn't the AI, I'm pretty sure.

As someone has already said, the two "main" Chinese languages are Mandarin and Cantonese, but the terms "traditional" and "simplified" actually refer to the styles of written character rather than the spoken language. And while there are certainly more native languages beyond the two, I can't confirm that total being 54 without looking into it more. I will say though, given that there are 56 ethnic groups in China officially recognized by the government, it is entirely possible that that number is accurate. Also, while not the same as being separate languages, there are also various regional _dialects_ of Mandarin; and I assume that this is the case for Cantonese as well. (Also, a quick disclaimer that while I am Han Chinese, I was born/raised in North America and have not done extensive research into the languages of China, so while I am confident in the info I've written here, there's always a chance that some of my "background knowledge" is wrong).
