Just tried this with a washed Colombian from Origin Coffee Roasters here in London - ground at 30 on the C40 w/ Red Clix (so 15 standard clicks), brew time of 6:45. First ever brew with the Tricolate and I have to say, absolutely delicious! Got the best brew I've had out of the bag so far, very clean and balanced, insane clarity - the aroma was *ever so slightly* less intense but in terms of character, also the best I've got so far. I did a lot of Aeropress emulation those days and i use a 58 mm precision basket (Decent 24g) as dispersion disc. It makes such gentle shower and fit so well, flat coffee beds brings me so much joy i do not understand

I just did your method for 1:22 ratio and honestly, I am blown away. Used a Guatemala Atitlán Blue Lake by Othello Specialty Coffee Roastery. Slightly on the darker side of roasting. I didn't expect the result to be that good for the ratio. Will try more with lighter roast coffee (currently have a China Yunnan Double Fermentation by same roastery, but still can't get a satisfying flavor out of it) to compare.

Tea from Tunnan has a pronounced pungency from it, it's the soil IMO. Perhaps the same is true for their coffee.

Nice to see the Aeropress hack at the end, there! Its not the most glamorous brewer, but surprisingly versatile. The size difference between it and the Tricolate definitely makes a difference, though. It impacts almost all of the variables (brew time, grind size, and grams of grounds).

I just bought my Tricolate last month and have been loving it with the right coffee, although I actually struggle a bit with consistency compared to traditional pourover, mainly in leveling the bed and filter. Seeing the sepia version is killing me though because I got the sepia Kinto set this summer and it would be a perfect match.

@@zachgoldstein4411 Mainly fruit forward Nordic coffees have had the best success, although I got some surprisingly good results with some coffees that I didn't anticipate working, like the Holiday Blend from Black and White which was a medium roast that also worked on espresso.

I've only brewed a couple of times with it but I'm enjoying it, I immediately noticed the difference in body and balance. This reminded me of a experimental brew that I used to make on one of those iced drip coffee philters, the philter section seemed like a Phin to me so I started to experiment with it, ended up using 1:17 a coarse grind and I used to tamp it lightly to even it out, it had a stainless steel mesh, so the oils could pass through it, the liquid chamber was very small, the cups I got with it were very interesting, it's cool to see something similar explored like that, this seems way more interesting.

@@LanceHedrick I just got around to giving it a go! I see what you mean about it producing a subtle cup, but it definitely has more texture than I would have expected. I brewed a fairly developed sort of medium-light Huehuetenango SHB that was really sort of tannic and astringent through my V60, and all that is gone! It's a lot less rough, and a little juicier, I think. More sugar on the nose, too! I could stand to dial it in a little bit yet. I used a 22:1 ratio and may try 20 next time, but it's super promising! I'm probably going to order a tricolate later...

I tried this method using Gevi brewer with aeropress and Hario drip assist. I used 12g coffee with 18.5 ratio (222grams) and dialed grind size to have total time around 6:40, and the result was very good!

When I did some bypass testing before it was a thing I made a brewer with 3in pvc and a cap with a bunch of holes in it. So it looked like an oversized ap. I used a cut out plastic mesh with a 3in lab filter and with the cap on it makes a nice seal. It's a no bypass brewer that predates the tricolate it's just missing the dispersion topper which is easy enough to DIY. I still use it, total costs about $5.

What do you mean "before it was a thing"? I only ask because hacks for no bypass have been attempted for a long time. The Vietnamese Phin brewer, for instance, is a no bypass brewer. You mean before the tricolate last year? In any event, nice!

@@LanceHedrick of course you're right, I meant before gagné/rao started talking about bypass a lot. It made really strong brews and I never quite liked them but I have since adapted tricolate methods to it and the brews are much better. The mesh inbetween the filter and cap is also adapted from gagné/rao's idea of using a mesh. I certainly am no inventor of this method but I was exploring what it would be like to have a brewer where water didn't escape down the sides (I didn't know the word bypass then).

Your explanation of veey fine grind and let it drip through for a long brew time sounds exactly like the south indian filter coffee, which is made in a south indian metal filter press (similar to the phin); which is also a no bypass brewer

Great video. The recipe you recommended has worked well for me this morning. I’ve previously found a 1:22 ratio too weak with one big pour after the bloom, but it’s much better with 2. Also, l love that you can stack tricolates.

I wonder if putting a filter in the pouring basket will encourage gentle and even distribution throughout the holes and prevent large streams that will divot the bed. Kinda like using a Flair 58 puck screen in an espresso machine.

This is what I do when I do makeshift tricolate using an aeropress. I use an aeropress cap as the distribution screen but it has holes that are way too big so it just ends up coming out too aggressively so I use a filter to stop that.

I've been using a tricolate for about three weeks. I sometimes get a great cup, but it is hit or miss even with the same beans. It appears that the paper filters are slightly too big, especially after they are wet and expand. This means that they don't often lay flat and then allow a lot of bypass, which produces a very bitter and astringent cup.

@@Syd7088 I haven't been using the tricolate because of the bypass issue. I have no idea which filters available are the newer filters and which are the older style, but mine definitely allow a lot of bypass. I find it easier to get good cups from a V60 and the Aeropress.

My single pour techniques on v60 tend to go very sweet and brings out some great delicate notes as well. It is amazing that tricolate can increase 6-8 more part water ratio of what I usually do in the v60 and achieve the same result. Thanks for the recipe, I saw Rao's recipe but I can't find any video on how he did it. Speaking of the tricolate, I had been getting some amazing cups. However, i had been using more of the tric-o-shot recipes because I want to compress my dose from 2 glass to 1 glass. Man, I don't think I will be buying any espresso machines or aeropress anytime soon. This makes me wonder, what if we get the water high in the end so that we could bring out the body more but we will also still have delicate notes from the first pour.

The best Tricolate recipe there is, thanks, Lance! Unfortunately, I had quite inconsistent results with this brewer. From my experience, it fits best (if not only) slower brewing coffees such. Quite often it's a challenge to fine tune the grind settings - if the coffee pours too quickly and ends say at 6:00, it's too weak, but often going under 15 clicks on my Commandante MK4 tends to make the coffee harsh, astringent, well just unpleasant :D. Anyone has a similar issue?

QUESTIONS: 1) I currently own a Clever Coffee Dripper. If you've tried both, how does the taste of the coffee compare? 2) Even after cleaning my Clever right after each use, the plastic still stains over time. This is almost exactly like a South Indian stainless steel filter coffee filter. It has two steel chambers/baskets, a top chamber that has tiny holes in the bottom (aka filter). You grind your coffee fairly fine and load it in the top basket, put a metal screen on top to diffuse the water falling into the coffee powder, and pour boiling hot water on top of the metal screen. The water filters/percolates through the metal diffuser and then filters down the coffee itself and then falls through the steel mesh and into the bottom container.

Happy New Year! What grinders have you been using with this brewer? For drip I use a Baratza Virtuoso. I'm happy with it for my V60 but based on what I've read it seems like this brewer would pair better with a more uniform flat burr grinder. I'm hesitant to invest in a new brewer if the rest of my equipment won't be able to support it properly.

Yeah that will produce many fines. And this brewer will likely make the coffee very bitter due to the brew time and amount of fines. That being said, you can always mess with ratio and grind size

A real budget alternative is getting cheapo Phin that fit the AP as a dispersion screen.

The phin however is made of metal. So the temp stability is absolutely dreadful.

@@LanceHedrick The thermal mass is quite small though, and stainless steel is one of the better metals when it comes to thermal conductivity. Not saying it's good, but preheated it's a *workable* option. I kind of like the traditional Phin coffee too, so I happened to have one to experiment with. But I don't think I'll do more than experiment. So far, the flavour profiles I want isn't what the Tricolate produces. Glad I didn't buy one myself. I'm pretty curious on the plastic April brewer though.

I have a phin. It doesn't do nearly as well even preheated but you are right! And i don't like the tric for lots of coffees. How many attempts did you have with the tric? There are many ways to use it. I'm sure you like a few.

Meaning, trying new ways with old gear and both new and old ways with new gear and see what sticks. 😅 Sold the Clever and V60 and kept the Switch and a Mugen funnel. French press for guests, AP for funsies. Sold the espresso gear. Debating what flat bottom brewer to keep. With that said, the Tricolate was a bit too narrow of a use-case to keep for me. About two thirds of the coffee I had I preferred in either cone/flat or AP. The rest was slightly better or equal quality in the Tricolate. In my notes, the Natural Guji and a very light Washed Bourbon was the two where the tricolate was the clear winner. :)

Id recommended stirring! Latte art pushed the crema in high concentration to the edges. Crema is horribly bitter. Your first sip will be much more pleasant with a stir

I wonder how the no bypass approach impacts caffeine extraction. Would 400ml of coffee using a 1:20 ratio on the Tricolate have more or less caffeine than a comparable 400ml 1:15 V60 brew?

No bypass vs. bypass will have virtually no impact, given the same amount of coffee used. The amount of caffeine in your cup is almost entirely dependent on the amount of coffee you use, as caffeine is quite soluble and gets extracted quite early in the process. So, the 1:20 ratio brew would have less caffeine than the 1:15 brew.

Did you watch the video all the way thru? Lol I show the aeropress as an alternative at the end haha! The tric does have superior draining and a proper dispersion screen. And it being wider helps with maintaining a flatter bed

Yes, you can only brew so little with the aeropress and you can't just do it as fine as the tricolate unless you do some maths.

I'm not going to argue with you, it is expensive. That's why I give you the aeropress hack at the end. Give that a try and if you love it you might want to upgrade for bigger doses

No. I have found that the amount of coffee needed in the next level is just too much to make it worth it. There's never a time I brew over 25 g of coffee. I live in the 15 to 20 gram range, which the tricolate is perfect for. And now that they make filters that are perfectly fitted, I don't see a need to separate the brew column from the base.

6-12 minutes. Really flexible but that is the time range I'm normally looking at depending on the coffee.

Huh, it looks like a Vietnamese phin in a lot of ways. There are some design improvements imo (plastic, taller, dispersion screen on top), but it's kind of funny how there is nothing new under the sun
