The bowls are purely eco friendly made using the leaves of Palash tree. The leaves add a unique flavor to the food served in it. The yellow crunchy noodles like bits are called SEV. Made from a blend of spices, chickpea flour and deep fried in oil. The balls that are served on top are known as Kachori. The curry is a mix of potatoe and green peas with secret blend of spices and overall its a very traditional recipe. Agreed, there is food spillage and visually it appears uncomforting. But trust me he is NOT serving the fallen food. Due to the crowd and speed of fulfilling the orders it becomes difficult to be that precisely neat and tidy. Also, since the dish is being served in the same manner for a very long time, the very essence of the experience tends to get diluted and impact the taste if he were to move into a modern style restaurant or food shop with stainless steel counters to work on. Some traditional age old stuff should be accepted as it is and not interfered with so called modern thinking. I bet, till date nobody has ever fallen sick by consuming this dish.

So can someone tell me what is in the pot, what the leaves are called, the crunchy bits he puts on it with his hands and the bread? that he puts on top? I've been seeing this guy everywhere in my feed lately 😂

The leaves are coriander leaves, the crunchy bits are called "Sev" which is basically fried gram flour seasoned with spices, the bread is called club kachori which is made from refined wheat flour with a layer of a specific kind of lentils filling. The speciality is in the potato curry which is a normal potato curry only, however with the addition of a secret spice which the owner sources it from his hometown. We're not even aware about the secret blend of spices that he uses. Hope that's enough 😅😊
