You can do so but I have tried it and found that it left a bitter taste. The sugar seems to keep the syrup sweet.

I used the left over syrup to make my Mountain Dew Popcorn recipe: kzbin.info/www/bejne/fYq9pYerbbt6j6c and other Dew recipes. It usually keeps well in a mason jar for a couple of weeks. It might last longer than that but I would just make more if I need any in the future.
