In Italy folks eat Tripe. Mother would never cook it. Scottish people stuff a lamb stomach with oatmeal, chopped up liver and kidneys and then tie it up with string and then boil it for hours. I have eaten spleen which is nasty. Dad cooked kidneys once in the house and the smell ran us out .Pig skin is good. Pancreases isnt bad cooked in a cream sauce with Sherry. A favorite street vendor food in Sicily is pig colon stuffed with chopped up meats, fat, minced organs, garlic and spices. I guess if your hungry enough you eat anything.
