Shah Jeera (Caraway Seeds) (শাহ জিরা / शाह जीरा) - ½ tsp
Coriander Powder (ধনে গুঁড়া / धनिया पाउडर) - 2 tsp
Red Chili Powder (লাল মরিচ গুঁড়া / लाल मिर्च पाउडर) - 1¼ tsp
Kashmiri Red Chili Powder (কাশ্মীরি লাল মরিচ গুঁড়া / कश्मीरी लाल मिर्च पाउडर) - 1 tsp
Turmeric Powder (হলুদ গুঁড়া / हल्दी पाउडर) - ¼ tsp
Garam Masala (গরম মসলা / गरम मसाला) - 1 tsp
Cumin Powder (জিরা গুঁড়া / जीरा पाउडर) - 1 tsp
Garlic Paste (রসুন বাটা / लहसुन का पेस्ट) - 1 tbsp
Ginger Paste (আদা বাটা / अदरक का पेस्ट) - 1 tbsp
Black Pepper (কালো মরিচ / काली मिर्च) - ¼ tsp
Lime Juice (লেবুর রস / नींबू का रस) - 1 tsp
Plain Yogurt (প্লেইন দই / सादा दही) - ¾ cup
Fried Onions (ভাজা পেঁয়াজ / तला हुआ प्याज) - 1 cup
Cooking Oil (রান্নার তেল / खाना पकाने का तेल) - 2 tbsp
Salt (লবণ / नमक) - 1¾ tsp (to taste)
Chicken Curry Pieces (মুরগির মাংস / चिकन करी के टुकड़े) - 1.2 kg
Milk Powder (দুধের গুঁড়া / दूध पाउडर) - 2 tsp
Chopped Coriander (কাটা ধনেপাতা / कटा हुआ धनिया) - 3 tbsp
Chopped Mint (কাটা পুদিনা পাতা / कटा हुआ पुदीना) - 1 tbsp
Ghee (Clarified Butter) (ঘি / घी) - 3 tbsp
Instructions:
In a large pot, add the bay leaf, cardamom, cloves, cinnamon, green chilies, shah jeera, coriander powder, red chili powders, turmeric, garam masala, cumin, garlic paste, ginger paste, black pepper, lime juice, plain yogurt, and fried onions. Add the cooking oil and mix everything well.
Season the mixture with salt. Add the chicken pieces to the pot and coat them evenly with the spice-yogurt mixture.
Sprinkle in the milk powder, chopped coriander, and mint. Drizzle the ghee over the top and mix well.
Cover the pot with aluminum foil, sealing it tightly. Place a lid on top for extra security.
Heat a tawa (griddle) over high heat on the stove. Once hot, place the chicken pot on top of the tawa.
Cook the chicken on high heat for 5 minutes, then reduce the heat to low. Continue cooking on low heat for 35-40 minutes.
Carefully open the lid and foil. Your Hyderabadi Dum Chicken Curry is now ready to be enjoyed!
