Thats what it was it wasnt all the major bar characters but just the family characters an the two brothers. It was changed because they thought it would more exciting an dramatic if one from each side made it.Tarantinos character also originally had a bigger part in the bar stuff i think but it was cut down.

I love how the movies idea of how long the transformation takes is based on when the plot needs it. Still a fun movie tho

I think the way it works is based off multiple factors. 1) Where they got bit (Neck would result in super quick transformation due to being near the brain). 2) How fast the blood is rushing through them/how excited/energised they are can make their body work faster, thus transforming them faster. 3) Type of vampire that bit them (We saw a few types, so maybe different ones have different strengths in their infection power). 4) Amount of blood they have (It is possible that having lost blood could make the infection faster or slower, as there is less to infect, but that likely means blood goes are the body slowly).

Anthony Vazquez He was in the midst of a Nam flashback. Because it was a traumatizing time for him, it skyrocketed his Adrenaline and metabolism. So when he got bit, his body processed it quicker. Jacob, took note on it and tried to do less exciting actions to slow it down.
