Can’t help but respect Viggo to an extent. He knows he stands no chance against John but still tries to match him hand to hand. He never lost respect for John and it was clear that he wasn’t only angry at Josef for signing their death warrants by screwing with John but because he also did it to someone he respects greatly and admittedly owed most of his success in crime to, someone he’d call a friend

Seems people don't understand the knife thing, It's revealed in John Wick 2 that John has a pretty good knowledge of where to stab people to achieve different effects when he stabs Cassian without killing him. What makes Viggo Tarasov the best villain in all the John Wick movies besides his personal history with John, is the fact that unlike other main villains like Santino D'Antonio, the Adjudicator or the Marquis, he never backed down from fighting John when the situation called for it. When Viggo realizes that he has no other alternative but to take him down head on, he accepts his fate and fights John even if it still costs him his life. In their opportune moments, Santino ran away from John and tried to hide in the Continental because of it’s rules against blood on the grounds, the Adjudicator hid behind a squad of High Table soldiers to take out John and the Marquis nominated another man to fight in his place in a High Table dual and waited until John was wounded, each inevitably facing their downfall whether it was in death or in fear. But Viggo had put up a good fight against John, even showing John respect as he was on the ground dying. That’s what makes Viggo Tarasov the best and formidable opponent for John Wick in the entire series.

While I can't explain why John let the knife go into him philosophically, I can take a stab at the biological explanation. That particular region of the body (the peritoneal cavity) is capable of being stabbed with a very low chance of dyeing. The greater omentum which stretches form the bottom of the stomach and forms and apron over the intestines is capable of filling holes in the cavity and preventing major blood loss, plus their really aren't that many major blood vessel passing into the area. Where John stabbed Vigo is extremely crucial, judging from the length of the blade, the blade traveled through almost every important/vital structure in that region of the body. It looks like its going to go through the brachiocephalic trunk as well as puncturing the top of the pleural cavity (the cupola) in one knife motion. Not only will Vigo have less blood going directly to his brain from having his common carotids and jugulars completely diced, but his blood pressure is going to drop drastically as Vigo goes through hypovolemic shock, as blood from the aortic valve moves to the low pressure in the pleural cavity, also squeezing his lungs collapsing the left lung. TLDR; John made sure that Vigo was going to die 3 times over

I like how even while literally killing each other, they both have this professional courtesy about them. Treating each other like old business associates at the end of a business meeting. No malice, just fulfilling terms of a non-verbal "contract" that they both understood was enviable. Even though John Wick acts as the antithesis of professionalism by seeking out his revenge, they still treat this exchange as just more business being conducted. Besides exhaustion, being injured, and not necessarily being great at hand to hand, Viggo is shown to be pretty strong. He punched his son once in the gut and made him throw up. That takes a lot of fighting knowledge to do. Even if the son is a really weak kid, a single punch to the gut doesn't usually make people throw up. On top of that, we have no reason to believe that Viggo himself isn't an extremely skilled man. We actually have the opposite to believe because of this scene. Viggo may be old, but that doesn't mean he wasn't once as strong or skilled as John. Viggo is 70 and John is in his 50s, but when Viggo was younger, he might have been a worthy opponent for John. This scene isn't dumb. You can't assume just because Viggo is old and that John is an unstoppable force, that he would be able to wipe Viggo out in seconds. He is still human and can still get weak.

He probably knows Systema and/or Sambo, but is having to simplify his techniques due to his age. He also is a mob boss. That counts for something. Purposefully taking a knife hit isn't a new thing, but it does leave an impression. It can be a functional, although painful, method to isolate and then disarm an enemies blade. The biggest problems being where you get stabbed. If you are smart(pragmatic) enough then through the hand, in the shoulder, or in the forearm are all places unlikely to cause long term complications(ignoring all the smaller areas that also wouldn't cause problems but are potentially more dangerous). It'll never be a great move, but sometimes you gotta work with what you've got.
