These are building made to last ....no plasterboard easy renovating...a lot of hard work...get a chute that goes to the garden for all the rubbish ...as they use on building sites

Ah yes - that would have been a much better way.... Sigh. Next project maybe :-)

Those are stick built in place cabinets made out of real solid wood. Good quality. Shallow? Yes. I have similar cabinets in my kitchen. I find the shallow upper cabinets to be very convenient as things don’t get hidden in the back and forgotten. It also makes it easier to grab them. They go all the way up to the ceiling so yes, I keep a folding footstool in the kitchen. I understand your reasons for replacing them. I just hope you don’t regret it years down the road. Unfortunately with stick built in place there is no removing to use elsewhere. I see your counters are very low. The wife of the previous owner of my house was 6 ft (183 cm) tall so my counters are higher than average, but I have learned to live with them. I’m building a center island on wheels with a butcher block top for my comfort. Rather than modernize my kitchen I worked with the existing cabinets and tile, tiled the floor and added a vintage stove and microwave hood. I installed a small dishwasher, but lost a cabinet storage space. That is why I’m adding an island on wheels. There is a shallow cabinet right next to the stove that is the perfect size for spice jars. The more I live in my house (1922) the more I understand some of the design decisions. I love the orange tree i. The garden. You can have fresh orange juice every day. You can prune it to make the oranges easier to pick. Really looking forward to when you have the time to get back to the garden.

Thank you so much for the help. I'm planning to get back into the Garden next week to trim the trees down (top them) so that we can get to the Oranges much easier. Also needs a good weeding :-)
