HYDERABADI VEGETABLE DUM BIRYANI RECIPE INGREDIENTS:
* Mix Vegetables: Baby Potatoes, Carrots, Green Peas, Broccoli, Sweetcorn, Green Beans (all 50% boiled)
* Chopped Green Coriander (Lila Dhana)
* Fresh Mint Leaves (Pudina)
* Fine Green Chilli Paste (Lilu Mirchu)
* Ginger & Garlic Paste (Adhu, Lasan)
* Brown Onion (Fried Onion)
* Biryani Homemade Garam Masala Powder (Cardamom, Cinnamon Sticks, Cloves, Star Anise, Bay Leaves, Black Stone Flower, Black Cardamom)
* Cumin Powder (Jeera)
* Salt (Namak)
* Brown Onion Oil (Tel)
* Lemon Juice (Nimbu)
* Turmeric Powder (Haldi)
* Curd (Yogurt)
* Cardamom Powder (Elachi)
* Garnished with Green Coriander (Dhana)
RICE COOKING PROCESS RECIPE INGREDIENTS:
In boiling water, the following Herbs and Spices are added:
* Whole Spices: Bay Leaves, Black Cumin, Cinnamon Sticks, Javitri, Cardamom, Cloves
* Fresh Mint Leaves
* Chopped Green Coriander
* Fried Brown Onion
* Ginger & Garlic Paste (Adhu, Lasan)
* Brown Onion Oil
* Salt
After about minutes of boiling, the whole spices are removed from the water
* Basmati Rice (Bhaat) is soaked for a minimum of 1/2 an hour
Then the partly cooked rice is:
25% cooked layered over the marinated vegetables
then
2nd layer which has cooked 50% is added
then
75% cooked final layer
* Pure Ghee
* Saffron Water
Finally garnished with:
* Fried Brown Onion
* Chopped Green Coriander
* Fresh Mint
* Rose Water
* Cardamom Powder
The above is sealed in a pot with aluminum foil then it's cooked for 15 minutes on a high flame and then 5 minutes on a low flame
When the Biryani is served, it's garnished with:
* Fried Brown Onion
* Fried Cashew Nuts (Kaju)
* Chopped Coriander Leaves

We've been to many Indian restaurants who claim to serve cook dum biryani, but in fact what gets served up on the plate is simply stir fried rice or pilau rice. As you will see in this video an authentic Hydrabadi Layered Dum Biryani is a time consuming lengthy process requiring patience whilst using time honoured techniques and spices.
Dum cooking means sealing the pot whilst cooking, which seals in more of the flavour of the ingredients, (i.e. when you can smell any food cooking you're actually smelling the flavours escaping from the cooking pot).
