Documentary: If you want to catch a Master Baker (baking his breads) you have to get up very early in the morning - 3:30am to be precise (I actually got there at 6:00am when it was still dark and the streets of Camden were very quiet.
Have you ever wondered "How is Bread made"?
Hopefully this video will go some way to answer your question.
It's about time that we visited our all time favourite bakery to get a special look at the process of bread making from start to finish.
Be mesmerized as Master Baker Bob makes the bread making process look so effortless - but be under no illusion that every aspect of what he does is not at all easy; be it a simple flick of his wrist to sprinkle a dusting of flour or the even the kneading of the actual dough, skills and techniques that he has honed and perfected over the course of 30 years.
This video covers the whole bread making and baker Bob says that it's a:
* Making process
* Resting process
* Shaping
* Proving
and then finally the Baking Process.
Bearing in mind that the whole process is affected by the environment such as the temperature and humidity.
This is a bakery which we've been visiting now for around 30 years; be safe in the knowledge that the bread that you buy here is freshly baked and made without preservatives.
Stand in the shop and you'll see all walks of life come into the shop; rich or poor: low, middle & upper classes can all be seen as customers in the shop all drawn into the shop with the wonderful wafting scent of the fresh baking smell of the breads - there is nothing better than the smell of baking bread!
Throughout the day you will get a slice of London in this bakery shop, office workers, mothers, fathers, police, night shift workers, taxi & minicab drivers, even traffic wardens, bankers, tourist visitors to Camden's Markets; all buying or eating some form of freshly baked bread, be it a sandwich or roll filled with delicious fillings or a takeaway loaf of freshly sliced bread to take home.
The best place to sit when eating in the shop? we reckon its right by the window so you can see the world pass by.
They can get extraordinarily busy but the speed of service is second to none; so if you're in a rush you'll never be waiting for too long to get served.
My favourite here is a crisp and crusty buttered roll filled with cheese, tomato, salad and simply seasoned with salt & black pepper.
The bread made here is handmade in a traditional style, made with heartfelt love and energised with human touch, not factory production line produced.
If you eat freshly made food that has a living energy, that food will return that living energy.
There's a huge variety of breads made here such as small Bloomer and large Bloomers, French Sticks (Baguettes), Square Sandwich Loafs, Soft + Crusty Rolls, Focaccia bread, Mediterranean bread, sourdough, wholemeal and much more.
The secret to getting very soft Focaccia bread is to mix it with a lot of oil, rest it, prove it so the oil incorporates into the dough and then cook it at a very high temperature. Before the dough is fully baked it is sprinkled with Oregano & Sea Salt and drizzled with Olive Oil, when it comes out of the oven it is again given a generous drizzle of Olive Oil.
Baker Bob says the basic recipe ingredients include some or all of the following: flour, oil, warm water, sugar, salt and yeast, some breads are topped with black poppy seeds or sesame seeds.
The doughs are very delicate especially whilst proving and have to be handled with care; one slight knock and the rising dough can go down like a flat tyre.

Having spent a day in this bakery, I now have major respect for bakers, they work so hard, harder then I ever thought!

Amazingly this bakery first opened it's doors in November 1972 and was previously known as "The Little Baker" it now called the "Camden Bakery" it is "the original bakery of Camden" - before even the world famous Camden Lock and Stables Market had even started.
The making of this video was a labour of love for me and it is one of my longest food videos that i've yet made to date, but I didn't want to dilute any aspect of the bread making process and hope that You the viewer enjoy watching this video documentary.

Bakers are indeed masters. My grandad is still baking (albeit now mainly retired) 60 years after opening his bakery, and now his son (my dad) works there too. I worked there for a bit but have now left, very proud.

I can bake a reasonable loaf, but no way would I even approach this level of skill. My mum taught me to make bread during the 1977 bakers strike in the UK, and I would have been aged 9 at the time. I remember mum baking not just for our family, but for the families of her two sisters, as those sisters worked full time then, and mum was part time. A big shout out to bakers and other essential workers right now.

What an amazing video. I truly enjoyed watching this hard working gentleman. Once upon a time, every town had a bakery but these days that is becoming the exception and not the rule. If you are lucky enough to live in a town that has there very own bakery with your very own baker like Bob be sure to support him or her and not fall out of the habit of buying fresh-baked bread and pastries.

Most bakers/owners wont scold you on your first day unless you do something very stupid. The industry has been dry on influx of new people for decades, the last thing we usually want to do is have people have a bad first day, making them leave and never looking back. Just be a motivated chap willing to learn, and you'll be golden at any bakery.

It's beautiful watching a master work. He's done it so long he just knows when things are right and on the fly can deal with any issues that he needs to deal with. Everything he does is like a finely practiced dance, everything is done in order. Every step is given enough time to do it's thing (mixing, resting/rising, baking) so that he isn't waiting on anything so he can be absolutely efficient with his time. The whole staff seems to really know what they are doing so they don't even really need to talk to each other very much because they just know how things should be happening and what the others are doing. I'm 63. My grandfather was a professional baker and I remember him rolling out bread two at a time. For holidays, he would make such delicious deserts. Pies with strips of interlaced dough tops. Yum.

I think something very important needs to be said here. IF YOU LIKE HONEST WORK SUCH AS THIS, DONT FORGET TO SUPPORT YOUR LOCAL BAKERY. This is most definitely a line of work that has taken very hard hits from technology. Small bakeries have been on a rapid decline these past 10-30 years depending on where you live. I live in Denmark, and there used to be bakeries everywhere. This is no longer the case. As a chef, this truely makes me sad. I dont want my bread made in huuuuge factories with loads of a junk added... I want it to be made with passion and with honest ingredients.

This was fantastic to watch. The baker's space may have been compact, but I did notice, NOBODY came into his area at all. He is obviously Captain of this Ship, and commands the space and the shop with quiet authority. Even to pick up various breads the front counter girl kept a respectful distance. That is a remarkable feat in and of itself. How organized he is, is also a joy to watch as well. The other thing I noticed, is he has absolute faith in his timing and system worked down to an artform. He never checks the ovens, yet the breads come out perfectly cooked. He isn't constantly checking the proofing ovens either, and yet they come out perfect as well. And his methods of bread making. If you have ever made a loaf at home, is completely natural and the way I make it, just much smaller quantity lol.

Literally all my dough comes in pre-made, shaped and frozen in my bakery with Kroger. Its good consistency from store to store, but people are always shocked our little team of 4-5 people working from 2am to 10pm don't manage to make Every single thing from scratch... from all the sweets to breads to cakes and brownies and cookies and.... good lord, we would need an oven at least that size if not larger! And about ten more employees! Its quite nice to see the skill and care he puts into the process of making the right dough, the right resting, the right proving, and the bake.

Swap the location of the proofer with old, unused mixer and you'll save this guy 5 miles of walking a day, along with a couple of hours for more baking.

I had a bakery at the end of my street when I was growing up, I used to wake up to the gorgeous smell of fresh bread every morning ... i still am obsessed with that smell ... thank you for a peek inside .. that's a man who really is a master...the timing and precision is outstanding.. I wish someone would invent smelly vision because the smells coming from that room would be amazing.. x ❤

When I was in my early 20's I worked at a Bakery, two in fact for a handful of years. I had to go in at 3:30am in the morning. I did much of the same work this man did but never achieved the same skill set or did we produce as large of a variety as this bakery. Two aspects of my employment and life remain with me to this day from that time and that was, how tired I was in those early house and how happy you would see some customers when purchasing such a high quality product that was well presented, golden brown and fresh. There is something magical about hot fresh breads.

This bake shop is so clean I can’t spot flour powder on the floors. And the master baker is so organized; put away stuff as soon as he’s done using them. I salute this bakery 👍🏻👍🏻👍🏻

OMG!! The energy, the strength, the stamina, the know-how and the skill; this gentleman and those like him earn every last brass razoo of their income, while parasitic politicians, officials and councilors sit on their fat arses creaming a lavish life-style from the public purse while contributing bugger-all of substance to the community's good.

I miss the time spent watching my brother, who had his own bakery but now retired and this brought it all back. It was very magical seeing how much bread he could produce in a few hours, he was the only baker in his bakery, plus he made all his own pies and he even made many of the cakes (he did have a pastry chef). Everything was done from scratch, he even soaked the grains for the multi grain dough, he cooked all the filling for the pies incl roasting the meats and veggies. The food was wonderful and delicious, I know the secret ingredient is love for the craft which big corporated bakeries do not have.

It’s so sad that hard work, dedication, determination and the rewards of success is purely wiped off the map in months from higher corporations. Making the middle men, mom and pop shops go out of business. I grew up on a farm hard work and sweat that went into every bit of crop, live stock, or baked good was highly appreciated and respected more plus nothing tastes better than fresh home grown, baked fresh/locally..same day. Words can’t describe it and it’s sad this next generation and the next may never know this dying art. Laziness is setting in so fast it’s uncanny!!! I pray we all return to our “Roots” before it’s to late.

This baker makes me feel tired by just watching him, he is constantly doing something his whole shift, damn. In my job im pretty stationary and I can take a break anytime I want and do, lol. Awesome video btw. I never seen a day in the life of a baker before.

As a baker myself at a small family business in Essex, love this and shows how hard us traditional bakers work. Something that no supermarket with their fresh frozen bread will ever be able to beat!

This gentleman is certainly a skilled craftsman, providing the daily bread for his locals day after day. I can only imagine the wonderful aromas as the dough is baking. He certainly has a great demeanor letting someone record his routine.

I make bread for my family daily, and I thought I was doing well to produce 2 loaves at a time! I am humbled by his mastery and organization. Not one loaf failed.
