I would love to see a fish-based dish on Cheap Vs. Steep at some point! I see stuff like salmon at the supermarket at ridiculous prices of like 50€ per kilo, and also with more affordable ones of 10-20€ per kilo, but is there actually any difference? Like with meat it's much simpler to call because usually the more expensive meat would be just a more luxurious cut, but if there's two fish of literally the same variety, how much difference can there really be?

Enjoyed watching. Two quick hints, regular flour is milled to be fluffy for cookies, quick breads, etc. Heritage flour is usually more dense even when fine ground. weigh out the correct amount for your recipe but sift it twice for any recipe (except breads that you want to be more substantial). Second hint, to insure you get a great citrus fruit it should feel heavy for the size, (it will be full of juice). To tell if it's sweet/ripe gently rub your nails across the skin. It will taste how it smells. If it smells bitter it will taste bitter, or weak/tasteless, sweet/ripe, etc.

Mrs B. called it when the pies went in the oven, cheap pastry & steep mincemeat looks like the way to go. Plus kinda-steep-but-not-the-steepest eggs since you can really tell the difference & I always get free-range, which is a bit pricier anyway.

Its interesting the history of mince pies, historically they were spiced meat pies, but gradually over time more spices were added and less meat, until eventually people stopped putting meat in them entirely except for the suet, and it was all fruit and spices. The reason for the transition is spices were historically expensive so the more spices in your food the more you were showing how wealthy you were.

That's what I came here to say. Barry, you're interested in whether price makes a difference to taste. The low price of some ingredients is just because producing it involved extra animal cruelty, or worse damage to land. Could you do a bit of research into why certain things are cheap vs steep? Maybe leave out items which aren't likely to affect flavour?

Hi Barry, could I make a little request? In these videos when you use eggs please could you use the cheapest free range eggs instead of caged hen eggs?? Money shouldn’t be given to battery farms even for the purpose of a video. They price isn’t drastically different but it can make a big difference. Also trying to buy mixed sizes is better than buying a specific size 💗🥰 thank you!

@justanotherviewer4821

The concept is the cheapest possible versus an "upgrade". Basically answering the question of "Can cheap do or is it better to pay more for something special?" Although I agree with your point, it isn't intended to be like for like. In this very video the cheap mincemeat is the generic syrupy variety and the posh one had alcohol and nuts in it. Same with the sugar... different type of sugar... When considering budget supermarkets the range isn't there for like-for-like (except free range eggs, ironically) so it cannot be close to like for like specification wise. The posh supermarket probably has similar products in a budget line but that wouldn't be wise as it probably would be from the same factory. As for caged hens... it should be outlawed. Free Range Eggs aren't significantly more expensive these days (although some organic ones get pretty pricey but that is consumer choice).

I think you can put waxed lemons in boiling water for a few seconds then you can then give them a quick wipe to get rid of the wax pretty easily. Will be giving some mince pies a go this year for sure.
@CarlGorn
@CarlGorn 2 жыл бұрын
Also a tip: If using waxed lemons, an easy way to remove the wax before zesting is to just sprinkle some bicarbonate of soda (aka baking soda) on a hot, generously damp tea towel. The soda will wick up the excess moisture forming a gritty paste. Put one lemon in, wrap the towel around it, give the lemon a gentle rub through the towel, take the lemon out of the towel and give it a rinse under warm water, dry with a paper towel or a second tea towel. The scrub towel can be used for every citrus fruit you're planning to zest for a given recipe, and can also be used to remove the wax from things with edible peels, like nectarines, apples, and pears.

It may go against the spirit of cheap v steep, but I do wish that even for the cheap one they’d make sure to get free range (not caged or “room to roam”). As a meat eater I know I don’t have much moral high ground to stand on, but free range chickens (both for eggs and meat) is one hill I’m prepared to die on. Eat meat and animal products - but make sure they’re treated well in life.

One of the favourite sweet treats at Christmas is the mince pie. This crumbly pastry is filled with fruit, often soaked in brandy and flavoured with citrus and mild spice. However the mince pie was originally a savoury pie - and not even round! In the Tudor period they were rectangular, shaped like a manger and often had a pastry baby Jesus on the lid. They were made from 13 ingredients to represent Jesus and his disciples and were all symbolic to the Christmas story. As well as dried fruit such as raisins, prunes and figs, they included lamb or mutton to represent the shepherds and spices (cinnamon, cloves and nutmeg) for the Wise Men. It was only later, post Reformation, that the mince pie adopted a round shape. Whilst it seems pretty unpalatable to us to mix meat with sweeter ingredients such as figs, raisins and honey, it was quite usual in the Middle Ages. A Tudor Christmas feast would include several different types of pie. The pastry crust of a pie was called a coffin and was often made just from a mixture of flour and water and used mainly for decoration. Small pies were known as chewets and had pinched tops, giving them the look of small cabbages or chouettes. The earliest reference to a small mince pie as a ‘minst pye’ rather than a chewet occurs in a recipe from 1624, called ‘For six Minst Pyes of an Indifferent Bigness‘. It’s hard to know exactly when meat stopped being included in the mince pie. In the Medieval and Tudor period the meat of choice for a mince pie was lamb or veal. By the 18th century it was more likely to be tongue or even tripe, and in the 19th century it was minced beef. It was not until the late Victorian period and early 20th Century that mince pies dropped the meat and had all fruit fillings (albeit with suet). Even today there are traditions associated with mince pies. When making the mincemeat mixture for the pies, for good luck it should be stirred in a clockwise direction. You should always make a wish when eating the first mince pie of the season and you should never cut one with a knife.

Barry, you should do a steep cheap vs. cheap steep, where you buy the cheapest ingredients from the expensive supermarket and the most expensive ingredients from the cheap supermarket.

GET CHICKENS! LOL. I don't even like to eat eggs (except in baking), but I keep around 40 as pets :P In the US, Mince pie isn't as popular, at least not in the south, but when dad was alive, I'd buy a frozen one every year for us to share - topped with a thick slice of medium cheddar. Since I'm the only one who eats them now, I'll by a jar of mince filling and a pack of those mini pastry shells and just cook up a half dozen at time. Dog story cracked me up: we used to have a black and tan coonhound that could reach very high places, and would sneak stuff out in so carefully we wouldn't notice until the wrappings showed up. She stole a whole bag of treat size Reeses cups, and stashed them around the house, so we found wrappers for weeks. Best theft was when we made a whole gingerbread house scene, and she very carefully plucked out the bits she liked without messing up any of the icing. Both events, I actually accused my husband at first lol.

The only reason that the eggshells are different is that the hens that laid them were different breeds, and the yolks are different because of the food they were given.

Barry, I love you and all, I love all your playlists, the cheap/steep as well, but.... I cannot believe you bought caged hen's eggs!!! I'm sorry but that is just a no go. Surely there were free range eggs in the cheap supermarket but still cheaper than the free range of the steep supermarket.

Christmases are not the safest times for dogs. Few years ago my aunt's dog got into half a plate of stuffed Portobello's, and mushrooms are also not the safest thing for dogs. Luckily it was a big dog and he pulled through without too much trouble. So glad my dog never gets into "human food" although she gave me quit the scare when she decided WD84 is edible and started licking it from the hinges of the doors I just oiled. Did not see that one coming. Pets sure like to keep you on your toes.

Barry, a challenge for you to recreate the Macdonalds festive pie, in a healthy version and then maybe do another cheap v steep. Also can you show us how to make a mince pie with a frangipane top. I bought some the other day from a well known supermarket and they were amazing.

Personally, I REALLY like to see you do a "Steep vs Cheep" on....*drumroll*...Condiments! Like is an expensive Ketchup, Mustard, steak-sauce or brown-sauce, etc worth it and more importantly does it do a better job of enhancing whatever it's being put on, compare to a cheaper alternative. Which is the main purpose of a condiment in the first place. Or if that's too out there how about a "Steep vs Cheep" on....something near and dear to my heart, on of my all time favorite dishes,...Lasagna! Would be extremely interesting to see if the high-end ingredients really do make that much a difference. I know many people that when it comes to Lasagna, or most Italian food they feel compelled to buy the most expensive version of nearly every ingredients because they think that if they don't, that they aren't doing it right and it won't turn anywhere near as good.
