@@MrCastIron until I learned to set my eggs out for atleast 5 minutes they would always stick. I pull my eggs out of the fridge before I start heating the skillet and then like you I never turn the stove over medium. Once I think that the skillet is up to temp I also add butter then start messing with my eggs. After learning this I've never had eggs stick since. I believe that you did an excellent job on explaining how if the skillet is too hot they will stick like glue. I hope that you and your family are doing well and staying safe my friend.

@@MrCastIron I am so happy right now. the eggs turned out great! I've had this pan a few years and have been trying to get it to this point and for the first time I have been successful. A little side note: I wanted to include some scallions in the scrambled eggs, and wasn't sure how that was going to work because I usually saute the scallions first on their own for about a minute or so. So I did that, (after waiting for the butter to melt) and then added the egg on top of it. I wasn't sure what was going to happen, but I let it be, just like in your video and didn't start mixing it around like I always did before, and when i used the spatula to push it away from the sides, it WAS NOT STICKING at all! I'm very happy right now! Thank you, thank you from NY State!

When I clean the skillets I let them dry for a few minutes on the burner and rub them lightly with oil. I believe they have become even more non-stick the longer I’ve used them.

I always add a splash of water to my uncooked scrambled eggs, and it makes them more fluffy and tender. I only mix them until just blended, so that a very small amount of color variation comes out in the end product, just for interest and it makes them look authentic and homemade, too. Then, I gently chop (or interfere with) them a little while cooking, in order to break up the cooked bottom and let the uncooked parts touch the bottom as soon as humanly possible. This helps them cook evenly while preserving their softness and the goal is to make them look a little like a pile of yellow large curd cottage cheese. The benefit of this quick method, too, is that you use a hotter pan, which I think helps a little with the non stick properties of the pan. It's quick and easy and the splash of water prior to cooking is the key. I'm vegan but vegetarian 0-3x times a year when I have cheese or eggs, so it's been a while since I've made scrambled eggs, but I can guarantee that when I made scrambled eggs last, I used cast iron or stainless steel. I seem to remember the trick was to use enough oil before you add the eggs, but I also thought that it helped to start with room temperature eggs? I don't know, but I love making scrambled eggs, and I just like them plain, without anything at all mixed in, except salt and pepper and, at the most, a small amount of aged cheddar as an accent for flavor only, which goes well with butter on top! Green onions are also good on top, but I just don't like them inside my scrambled eggs. Now that I think of it, I might like them if they were first "flash sauteed" in the pan prior to adding the eggs, just so they get enough oil coating them that they don't "adhere" to the eggs and are separate a little in the scrambled eggs. Hmm, gonna have to try that. You got me talking about food now and I can go on forever, lol! Thanks for this good show because it's essential(!) to know how to cook scrambled eggs in cast iron!!!

Everybody seems to be complaining the eggs look like an omelette. It’s only because he didn’t stir them a whole lot if you stir them a whole lot during that process, they’ll look more like your scrambled eggs his were just fine and came out perfect Great video I’m thankful for all the tips and info on caring for cast iron skillets Thanks so much.👍🏼😊

Dearest Mike, I didn't even know who you were until today but you are my newest hero! I have spent the afternoon watching your videos because today I finally decided to begin the 'Cast Iron Adventure' and went out and bought myself a Lodge 12" skillet. Your videos are just what this cast iron newbie needed and I can't wait to start cooking! I feel empowered by the knowledge you have kindly shared with us and I also feel better about having a cast iron pan that will be properly seasoned and ready to go in case we suddenly have to cook outside on a cinder block rocket stove which would have killed my useless teflon-ish fry pans. Crazy times seem to be upon us... You are the best! Thank you!

@@MrCastIron I followed all of your instructions and I cooked 3 pieces of bacon and then I cracked in 2 eggs into the hot bacon grease. I was so confident at that point that I actually had the eggs over easy. What a treat!!! I am officially hooked. I haven't had eggs this tasty since I was a kid - crispy outside with a runny yoke inside. They cooked gently but briskly, if you know what I mean. I haven't cooked real bacon in years. My new pan will be seeing bacon more often now. Lodge Cast Iron has a nice short video on cooking in your pan the first time. using the cast iron skillet is a no-brainer. I never experienced food sticking on my cast iron the first time I used it because all you have to do is to properly season it and execution. I can make my scrambled eggs perfectly in cast iron with only a thin layer of vegetable oil over medium heat and leaves without a trace of fond. I'll just pour my beaten eggs and turn off the heat as quickly as possible. then gently stir it with a silicone spatula until your desired doneness. just like those non-stick Teflon-coated pans do. In fact, cast iron works better than my well-seasoned carbon steel wok. it also does an excellent job with my grilled pork belly. I don't even have to grease it and just wait for the fat to render before its starts to caramelize.

I know this is a 2 year old video but I want to add my 2 cents with another little tip. It's best to NOT add cold eggs (or cold anything) to the pan. Bring your eggs up to at least room temp before cooking. Either set them out a couple of hours before use or place them in a bowl of warm/hot water from your sink. In other words, you don't need to heat water up on your stove top. Hot water from your sink is plenty hot enough. You just want to knock the chill out of those eggs. I recommend allowing meat to come to room temp before adding cooking as well. 😊

I always cook mine on medium heat, with a light coating of canola oil non-stick spray. They always come out just right. Had some for breakfast just a little while ago! 😁 I saw a video of a guy with a new Lodge skillet, who tried to cook eggs with it blazing hot. Naturally, they stuck terribly, and he blamed the rough surface. And what did he do? He took a sander to the skillet to fix it, and you know the process. I commented that there was nothing wrong with the skillet, he was just using it wrong. He replied, graciously, that he liked the smooth surface. We each have our preference, but personally, I would not go to that trouble.
@MrCastIron
@MrCastIron Жыл бұрын
Thanks for sharing that, Mike. And yes, you’re right. You don’t have to take a sander or a grinder to cast iron to be able to cook eggs or anything else in it, for that matter. I certainly don’t suggest or recommend sanding or grinding because cooking in them will smooth them out naturally over time.
