The funny thing about Baby H is that her food profile is being expanded at such an early age. She will grow up with a Southern American food addiction. If she stays on the UK side of the pond she will either have to learn how to cook everything from Mrs H or goto school on this side of the pond somewhere in the South.. Once you get a southern food profile it’s hard to eat anything else.

LOL... Here I am, a 68yr old white guy who's had more BBQ in my life than an honest man should admit to .. and I'm laughing out loud watching you guys eating and enjoying BBQ! And I'm probably enjoy THAT as much as if I were eating it myself. Love it... it's a real hoot! That BBQ sauce at Coopers looks pretty thin.. I think I'd call it a Colorado style western BBQ.. more vinegar au jus style.

Every BBQ sauce is 100% different at every place, same with the beans. The sides and sauces are where the differences really shine. Most places are fairly similar in their proteins because of their similarities in cooking, so when you find someone with sides you LOVE you end up going there often.

Barbecue ain't about sauce...
@lilykep
@lilykep Жыл бұрын
@@staffordduecker665 I agree, but if you live somewhere with good BBQ and everyone smokes their meats in basically the same way and uses pretty close to identical rubs, you're left looking for where the differences lie. You can get briskets from the top Texas BBQ joints and compare them side by side and only find very minor differences because every place *knows* how to make a proper brisket. Same with chicken or turkey. Now you get bigger differences in ribs and sausages, but those usually aren't what people are going to the place specifically eat. That leaves what you eat WITH the meats that let an individual restaurant shine brighter than the rest. A sauce should never be *necessary* but a few good ones can be a great complement if you're looking for some variety. Mostly however it's about the *sides* finding somewhere that offers amazing sides to go with your mains is a blessing because it adds much needed variety. It's also something at a *lot* of places overlook as unimportant instead of embracing as something that can set them apart from the rest.
@lilykep
@lilykep Жыл бұрын
@JeffGes There is something to be said for the similarities tho. If I'm going to a BBQ joint and I order a brisket I'm gonna want something I recognize as a brisket, same with going to a Mexican place and ordering birria tacos. You have the flavor of the thing in mind and if it doesn't taste like that then it becomes an unsatisfying eating experience.

It's really weird that America does German-like and Polish-like sausages so much with so much flavor and yet the common "barrier" between both nations and the USA is the UK (in a sense.) And some how they are always amazed that we put extra stuff in our sausages that adds flavor to them.

Texas BBQ tip. Put an open beer can with half a beer in the cavity of the chicken standing it up over the can. And true Texas seasoning is salt, black pepper and garlic. With chicken and turkey it is always good to wrap it in foil with butter for an hour and then putting it back on the smoker unwrapped to finish.

Another way to do chicken you can do easily at home is to make drunk chicken. Open a 12 oz canned beer of your choice, and yes the darker ales work great! Open it and put whatever spices you like in the beer. No limit on amount. I prefer garlic, lemon pepper, paprika, cumin, oregano, black pepper, and a little pickled jalapeno juice (sometimes you have to drink a little of the beer out of the can before adding spices if you want the jalapeno juice in there). When you're done with spices, stick the can inside the chicken set the upright chicken on your grill and shut the lid. When the chicken is done, just take it off the grill and take the can out. If any liquid left, pour it over the chicken...and dig in. Will be very moist sort of half smoked half roasted chicken. Pretty sure you will like it.

It’s also called Beer Can Chicken. Mrs H since you now have a Smoker. You can use a 12 ounce can of any beverage since you still have a junior foodie. Apple Juice also works. The liquid keeps the chicken moist while it’s Slow Cooking. A Smoker is the outdoor equivalent of a Crockpot.

My favorite from the Cooper's in Llano is the Big Chop, a huge pork chop cooked perfectly on the pit. Hmmm.... maybe I need to drive out there over the Christmas holidays.

If you had a big dip of vanilla ice cream on the pecan pie it would be extra good.

I'm glad no one heard Mrs H refer to her food as "protein". Especially in Texas lol. It's either beef or chicken. Every place has their own take on BBQ sauce, whether it's for beef or chicken. But it usually isn't so vinegary that it over-powers the brown sugar or molasses sweetness. I love peach cobbler. Pecan pie if done right, is very rich. Of course you can't go wrong with roasted sweet corn on the cob.

I don't do vinegar based BBQ sauces. It's just wrong. Tangy, sweet, smokey, hot. Those are the options. Vinegary is not a valid option. It ain't salad.

Our sausage is a polish or German sausage. Pecan pie is The State Pie or as we would say National Pie of Texas. Grease or fatty foods help cut the heat of the jalapeño.
