From Gonzales, Texas (Come and Take It) Tex-Mex varies greatly across the state. Anytime I go into a new mexican restaurant, the first time I will always order the combination plate or special plate. They all have one. It comes with enchiladas, tamale, taco, chalupa, rice, and beans. The first bite is the rice and beans and my mind is made up. The best are the small mom and pop restaurants in any small Texas town.

Gonzales. My friend lives 25 min west on some two lane hwy. He and his chick took me there. Right before you get in town on the soth side of the road theres a tex mex restaurant. Looks like a dive. I got the biggest platter and a mango margarita. That place has some of the best texmex ive had since eating at monteray house in LJ as a little boy!

That’s correct. Not everyone but some people will put some Coca Cola in towards the end of cooking process. Personally I don’t do that. All the tacos you had appeared to be served on flour tortillas. Fajitas yes flour tortillas. Carnitas corn tortillas.

Our local family owned Mexican restaurant has fabulous queso. It's 2 cheeses and diced green chiles. It's got just enough spice that I can still eat it.

I got a mexinese place near me. Real tasty stuff. Japanese/mexican fusion. Hibachi burritos, mexican sushi (using a roasted poblano instead of seaweed), miso horni soup. (Shaved jalapeno simmered in a hornitas tequila sauce put on top, instead of seaweed.) And the guacasabi dip is killer. Get some mexican onigiri. Fajitas in the middle, mexican rice mixed with cheese dip formed around it, then pan seared and wrapped with spinach leaves. Damnitt... now I'm hungry.

So glad you two were able to visit Valentina's. Texas was part of Mexico back in the day...so back in "the day"...Texas was Mexico. So the influences have blended over time. Especially in the Hill Country region, Austin to San Antonio and further south. Some of my favorite taco's in Texas are at Valentina's.

Tex-Mex food originated in San Antonio by the immigrants from the Canary Islands. Since the Canary Islands were settled by the Moors, the Tex-Mex food is influenced by Moorish traditional spices. The food in Mexico is more influenced by the starches available to the PreColumbian cultures. Still there is crossover with lard, corn, beans, and some spices native to Mexico and the Americas.

Every morning, a different breakfast TexMex joint, and NOT the big glass towers but the li'l joints... like along South 1st Street, near Oltorf. Or Oltorf itself, and 'off-Oltorf.' South First is a great haven for TexMex joints - some big older ones, some tiny ones.

Go to just about ANY Major US City and you can find “Authentic” Chinese Italian Russian Vietnamese French Korean Mexican Indian Filipino Japanese The list goes on and on. “British” food gets a bad rap due to their food just not having a great deal of “Spice”/Big Bold Flavors Like other countries food. Even British people acknowledge this fact. And I mean TONS AND TONS of “British People” have said that “British Food” lacks the Spiciness/big bold flavors that other countries food has. Nobody is saying that “British food sucks” it just doesn’t have the variety that other countries do.

Nachos were invented for visiting American military wives in 1943 in Piedras Negras, Coahuila, Mexico. Chile con Carne as we know it today came from San Antonio. Tamales are completely different in Texas and N. Mexico (typically wrapped in a corn husk) than the ones further south (typically wrapped in a banana leaf.) Barbacoa in Texas and the border are typically made of fatty beef head meat, and further south, barbacoa is much more likely to be goat meat. There are probably hundreds of variations of guacamole from the US through S. America. As with a lot of cooking in the region, (especially the border region) nobody can say which is “authentic” or not…most culinary experts consider “Tex-Mex” just as authentic as “real” Mexican food, just different.

While in Texas, try and find a Culvers. It has been stated that it is "The Best Fast Food in America." It originated in the upper Midwest, but has restaurants in Texas. Try, the Butter Burger, the Cod, and the Pot Roast. But most of all, try the frozen custard...I recommend the turtle (chocolate, caramel, and pecans).

You are right on about the queso being similar to a bechamel. That's how you make a good cheese dip that remains a melty texture. Add to this lots of cheese and peppers... another way it's often made is velveeta and rotel (canned tomatoes and peppers)... the latter works great in a crockpot for a party. The thick tortillas mean they're handmade. I love them like that. Classically, Tex-Mex is a bit more Americanized than those tacos. Think Taco Bell. Ground beef tacos in a crispy shell, burritos, enchiladas with a red sauce OR chili on top. Sides of mexican rice and refried beans.

It's all the real thing, I live in Mexico for 3 years, the United States has everything Mexico has as far as food, it's regional if you live by the coast you get seafood, if you live inland you'll get goat you'll get linguee, it's all authentic if it's made with a certain spice pallet. Hispanic food in the United States is every bit as good as Mexico. This is not 1942. Everything made in Mexico can be duplicated here.

The best thing about TexMex to me is that queso. I could fill up on that to the point I wouldn't be able to eat much else but I will usually have to leave room for my TexMex, go to, the chicken chimichanga (In case you don't know what a chimichaga is, it's basically a deep fried burrito). I have that with lettuce, tomato, and loads of sour cream with of course plenty of queso smothering it.

Give Pappasito's steak fajitas (marinade is incredible) a try with table-prepped guacamole for good TexMex. Their margaritas are pretty good (and ample!), too. Amazingly, and pathetically, there are tons of snobs about this kind of thing in Texas that "know the best place", so try several places, as each can be very unique and tasty.

When Valentina's were a food truck a mile and a half from my house they were awesome, and it looks like you had that experience! They moved to south of Austin to Buda, TX to get a brick and mortar place which it looks like you found! I might call it Mex-Tex, rather than Tex-Mex, but that's just picking at things. Delicious either way!

The place they were at was primarily a BarBQ place with Mexican or probably more Tex Mex influence. Sadly, they have closed down because of mismanagement. They were one of the tops in the area at one time.

There used to be, or still could be, a bakery in Aransas pass Tx,. Best breakfast taocs, carne asada, fresh made tortilla's. The line used to be down the block in the mornings waiting to get taco's. I haven't lived in that area since 1999, but i miss it. great video BTW

Miss Nicola you have a fantastic laugh 🥰 if yall ever come toward Oklahoma you should look up neat places on historic Route 66, try an Oklahoma onion burger, chicken fried steak, and as a native American from the Cherokee reservation you definitely need to try frybread/Indian tacos. It’s not the same as fried bread where you come from but I like it plain with some honey and butter. It’s basically American biscuit dough that’s fried and it’s so bad for you but so good. Comfort food for us. ❤ love you guys and safe travels!!

Going to Chili's in San Diego for Tex-Mex? You live in the most amazing place (San Diego) to get amazing tacos and all other Tex-Mex! (read: American style Mexican food - think Cantonese style Chinese food is really US-Chinese). I get that it is fun to do a Tex-Mex place in Texas. Thanks for sharing!

"Queso" is short for "Salsa con queso" in most places. In other words, salsa with cheese. It usually has at least jalapenos in it and often times hotter peppers. Tex-Mex is one of those regional foods that is popular nationwide, including especially in California. So you should be able to find good examples of it at home too.

Understand your content is more towards authentic American food but I think ya need to check out more fusion foods!! California and Seattle is pretty damn good in my experience..I’m sure Texas, NY, and Florida also has amazing fusion foods too..oh and don’t forget Caribbean foods!!

Tex mex is my fav. I have a lot of family in Texas. My fav thing to get is chicken and steak fajitas. I usually poor the white cheese dip on top of it. you should try that whenever you are able to.

Bbq in Michigan would be smokin bob bbq...he has a food wagon...he has award winning food...its amazing but you have to get there early because he usually runs out....gladwin Michigan is where he usually is...if you need a place to stay go to the Riverwalk....pipers pub pub is another good place to eat in town or mr m's has great pizza while you find out where bob is going to be and what time

San Diego isn't known for it's Tex Mex. But I believe you need to check out for local food trucks. Many of them are just as good or better than a brick and mortar establishment. At least, in Indiana they are. And I've been told it's the same everywhere.

Im so glad yall were able to try Tex Mex ! There’s honesty so much for Tex Mex u can eat. My British fiance never gets tired of it 😂nor the real Latina food I’ll make 💙 Queso blanco (white cheese ) is what u ate , it’s sometimes comes spicy which is hatch green chiles or just by it self (some places even put chorizo or pico in it ) salsas ,guacamole ,and even refried black or pinto beans with chips will be a starter. Most of the time it’s free
