There is no option to create encrypted Backup with Windows Server Backup feature but you can enable the BitLocker Drive Encryption feature on your server and turn on BitLocker to encrypt the external drive used for backups.

hello I've seen your tutorial and its great to keep update on windows sever. is it possible to backup data only AD and DC (user and password) and restore it to newly fresh windows server 2022 ? I've got a scenario where the vm image is exposed by ransomware and I don't trust the backup OS Image level, so I've had to installed windows server on another location and another bare metal and restoring about 800 user on this new server. thank you

No, it's not possible because there are many registry entries related to Active Directory present in the operating system.
